Support new protocols from wayland-protocols

There is a v2 for the text protocol and a renamed input-method protocol in wayland-protocols (my repository for now)

Use them instead of current outdated versions.

text-input-unstable-v2 is the protocol between applications and compositor. Between compositor and virtual keyboard we have the input-method protocol. I do not see a new version for this right now.

We can push for an updated version of this protocol if we want to implement it in a compositor.
