Nashua School District Food Waste Log Policy

PURPOSE: The purpose of the Food Waste Log Policy is to keep track of all significant
amounts of wasted food whether it be accidental losses, losses due to spoilage or leftovers
discarded. This will allow management to keep track of financial losses due to food waste and
determine any action that needs to be taken to prevent excessive food loss.
Food loss is expected in a food service operation. This policy was NOT made to punish anyone
for wasting food but rather was made to determine if there are any major food waste sources that
can be corrected.
SCOPE: This procedure applies to foodservice employees who handle, prepare, or serve food
and the management staff that supervises the food that is served.

INSTRUCTIONS:
1. The Nashua School District Food Waste Log form must be posted or readily accessible by
food service employees.
2. This policy pertains to any significant amount of edible food discarded. It does not apply to
non-edible food waste such as skins, peels or seeds removed from produce nor does it deal with
insignificant losses such as food stuck on the side of a pan or bowl. If the food discarded
amounts to more than 10 portions or an equivalent amount it is included in this policy.
2. If any food service employee discards any food that fits within the policy guidelines as
detailed above they are to immediately fill out the Nashua School District Food Waste Log
which will be provided to them and readily accessible.
3. Each food waste log sheet should have the facility name and coordinator name filled out by
the cook or coordinator in charge of handling it.
4. When reporting food waste the employee should fill in the current date and time the food
waste occurred. They should indicate the item that was discarded as accurately as possible. They
should then indicate the amount that was wasted in the most appropriate unit determined, e.g. 1
case, 10 portions, 1 sheet pan, etc. The employee should then indicate the reason for waste such
as: spoilage, accidental waste, discarded, etc. The employee should then initial the sheet in the
provided space.
5. The coordinator will collect the waste sheet at least once per month or as needed if full. The
coordinator will then review the waste log sheet, sign and date the bottom of the sheet to indicate
they have reviewed the sheet. Once full, the coordinator is to replace the waste log sheet with
another empty waste log sheet.
6. The coordinator will then deliver the waste log sheet/s at least once per month to the Food
Service Director. The Food Service Director will conduct a financial analysis on the food waste
logs as needed to determine cost of food waste. The Food Service Director will use data obtained
as needed to determine if any changes need to be made.
