Item/Food: Egg chili mayo SANDWICH

Total Yield: 25 sandwiches

Ingredients Weight/Measure Method

Sandwich Bread 50 slices

Egg 1 Tray Boil

Mayo 500 g (54 Tbsp)

Parsley 2 pinch Chopped

Black Pepper 2 tsp Chopped

Salt 2 tsp

Sugar 1/2 tsp

Chili Sauce 100 g

Lettuce -

Tomato - Sliced

Water -

PREPARATION

1. Boil water in a large pot.

2. Once it boiled, put in eggs and let it cook for about 10 to 20 minutes over medium
heat.

3. After finished, soak the boiled eggs that already been cooked in a large bowl of
cold water to let it cool down.

4. Peels off all the shell from the boiled eggs.


5. Crush the eggs in a large bowl and mix it with mayonnaise, black pepper, salt,
sugar, chilli sauce and a small bowl of chopped parsley.

6. Take a piece of lettuce leaf and layer it down on the one side of the bread followed
by a layer of lettuce, tomato, scrambled egg, and cover it up with another layer of
bread.
