Senbei is a type of rice cracker with various shapes,


sizes, flavors, usually savory but sometimes sweet.

Senbei are usually cooked by being baked or grilled,


traditionally over charcoal. While being prepared they
may be brushed with a flavoring sauce, often one made
of soy sauce or mirin.

Arare is a type of bite-sized rice cracker made from


non-glutinuous / glutinuous rice and flavoured with
soy sauce.

Guidelines formulation of rice cracker 8

Proces:
• Wash rice and sock in water for 4 hr;
• Mill the rice to fine powder (moisture is around 40%);
• Mix NPS and rice powder;
• Jet cook the mixture
• Sheet and cut into shapes;
• Dry till moisture is around 9-12%
• Bake them.
• Seasoning.
• Packing.
