Established on October 08, 2015, Hiroshi Japanese Sushi is the first
Japanese homemade business in San Pablo Laguna. Hiroshi Aiko
Enriquez III started his traditional sushi with his own ingredients that
cultivate the aroma of his special method on making different flavor of
sushi. In 2017, Mr. Darwin Enriquez's grandson of “Apong Aiko”
managed the business up to now and he changed the name to Nakama
Japanese Bar and Sushi. He continuously does the concept of a
traditional process of sushi that his grandfather started. One of the
procedures of making sushi is placing a layer of cooked rice seasoned
with rice vinegar alongside of a fresh layer fish, the layer was
compressed in a small wooden box for two hours then sliced into
serving pieces. This new method greatly reduced the preparation time
for sushi.
His business is continuously growing, Mr. Darwin adopt the
modern speed fermentation process by adding rice vinegar and salt to
freshly cooked rice and letting it sit for a few minutes. He then served
the sushi in a hand-pressed with love and passion, topping a small ball
of rice with a thin slice of fresh raw fish and put the secret special
ingredients that he experiments and took half a year to meet his
satisfaction when it comes to the taste test that he does. Since the fish
that he used is always fresh from the bay, there was no need to ferment
or preserve it. One of the keys to great sushi is getting the rice just
right it needs to be sticky enough to hold everything together but each
distinct grain of rice should still hold its shape and glisten with the
savory sweet vinegar its seasoned.
