1. ABSTRACT
A Manufacture for has been declared in the student for his partial fulfillment of BSc degree in
Manufacturing technology. After detail project of the design is performed, the correctness of the
design is verified. Apart from this, workshop drawings are prepared side by side for the corrected
design and extra improvements are given. At the end the prototype for this verified design is
manufactured and the prototype is tested for different parameters. This report contains the design
that has been verified and work shop drawings for this design. In addition, it contains the steps how
to manufacture all the parts of the machine. Generally, this final year project report mainly focuses
on manufacturing and testing of the improved electrical Dough mixer machine. In bakery industries,
mixing is one of the major operations that determine the mechanical properties of dough, which
have a direct consequence on the quality of the end product. The mixing operation is to facilitate
structure development and ingredients homogenization. In view of the associated problems and
difficulties in the manual method of dough mixing, across-ribbon dough mixer was designed and
developed. The unit parts of the mixer were designed following standard engineering principles for
part-sizing, using locally available materials.

2. INTRODUCTION
Before a year’s Ethiopia economy based on agriculture. Now a day’s Ethiopia from agriculture
transferring to technology. In this ways TEVT trainer have grate roles in technology transforming
based on this trainer’s identifying the gap doing the technology of senior project of Dough Mixer
Machines.
Dough Mixer Machines Powerful planetary suitable for mixer bakeries pastry shops and restaurant.
The proposed machine is electric power; its parts are made ferrous and non-ferrous metal.
In bakery industries, mixing is one of the major operations that determine the mechanical properties
of dough, which have a direct consequence on the quality of the end product.
The mixing operation is to facilitate structure development and ingredients homogenization. Proper
dough development is affected by mixing intensity (mixing speed) and torque imparted.
The machines it have different components and rotates mix by low motions.
The selection of materials for the designing process is a major stage for the process of translating a
new idea in to detailed information from which the product can be manufactured in any design each
of its stages requires decisions about materials from which the product is to be made and the
process. before making the product selecting proper materials for the design. But improperly chosen
material can lead failure of the part or component of the designing part and also unnecessary cost.
Selecting the best material for a part involves providing the necessity service performance for the
work.
A. Back ground of Project
In bakery industries, mixing is one of the major operations that determine the mechanical properties
of dough, which have a direct consequence on the quality of the end product.
The project is made up of ferrous and nonferrous of different metal structure. It has different
components and operated manually, inbuilt with four subassemblies parts. This dough mixer
machine has been designed specifically to be constructed in workshops that have only a basic
manufacturing capability, such as those that are to be found in MSEs Working [Link] metric
sizes of metal are specified in this project details. But other sizes can be substituted according to
availability, providing some consideration is given to the strength and durability which the
components require. The tools that are necessary to construct this machine are: welding machines
and equipment, drilling machine,
When we see traditional mixing dough by hand it has the following disadvantages.
1. Uncomfortable for mass production.
2. It is not save time.
The modified and manufactured mixing dough machine has the following advantages.
1. It has a force decreasing mechanism.
2. The machine is ergonomically correct.
3. It is comfortable to handle.
4. It is durable.
5. It has a high quality.
6. All materials are available to manufacture this machine.

Description of project
The project is made up of ferrous and nonferrous of different metal structure. It has different
components and operated electrical This dough mixer machine has been designed specifically to be
constructed in workshops that have only a basic manufacturing capability, such as those that are to
be found in MSEs Working area.
Standard metric sizes of metal are specified in this project details. But other sizes can be substituted
according to availability, providing some consideration is given to the strength and durability which
the components require. The tools that are necessary to construct this machine are: welding
machines and equipment, drilling machine, lathe machine, and hand tools such as files, try square,
power hack saw, etc.
Our project producing or fabricating from square pipe, plate of body frame
Using electrical motor to transmit rotation from one shaft to another shaft by mechanism
of pulley and belt.
The hook /rod bent rotating by pulley mechanism transfer by the shaft than after the
gear change the direction rotation stainless steel casserole rotate to the opposite
direction of hook.

D. STATEMENT OF THE PROBLEM
As it is indicated in introduction, most of our Bread House no Electrical Dough mixer machine it may
be he did not work in Bread House so that is the problem. For instance, we have no any the problem
of required various Dough’s and to improve creativity of the enterprise. most of Bread House
enterprise uses the mixing dough up to 25kg and it uses three path motor in our project to
manufacture the degree is increase and the motor it uses 3phase motor and other small parts of the
machine.
Even though this electrical Dough mixing machine has been first manufactured by outside of some
company.
Bakery needs a quick and efficient way to create uniform mix through a device that consistently
dispenses the same amount of dough.
Manufactured and small modification like the degree of the machine increases.

The correction of manufactured parts will be done.
Assembling and testing of the bread dough mixer machine will be done to conclude our
finding.

This senior project is aimed for design and manufacture in favor of the last academic year senior
project as basis. However, we totally tried to be engaged in designing a new one and being produced
to go in line with the following objective.

To identify the gap and constraints b/n existing situations and the bench mark

This focused on developing value chain analysis; the activities in production manufacturing product,
identifying potential constraints and recommending possible interventions
The amount of project to hold the size of up 15R to 30R dough cylinder/basin.
To mix of Dough the weight of 20kg up to 25KG per 10-12min.
The study was conducted in take samples SME Addis Ababa city industrial work
enterprise, which engaged in the manufacturing of industrial product for the local
market and end user. This study focused on the methods how the SME
manufacture these different improve dough mixer machine products.
RATIONALITY OF PROJECTS
The process of analyzing the Value chain activities was according to the four parameters (Yield,
Quality, Cost and Time) to identify the Gaps between AS IS compared to the Benchmark. The four
parameters defined as flows:

The theoretical back ground of this study is value chain approach. Empirical data is based on a field
survey that was carried out on Feb 2010 /2017in the respective city mentioned above.
During the field study several interviews and observation are carried out to identify main activities
and sub activities.
The analysis of this study done by benchmark the best performer city to identify gaps and to provide
solution for the gap identifies.

3. LITERATURE REVIEW
This project (dough mixer Machine) creates import substitution, senior project as well as job
opportunity to those MSE who produce this machine itself, there is wide range of market which
benefit out of this supply starting from customers working on any metal shop. The process of
analyzing the Value chain activities was according to the four parameters (Yield, Quality, Cost and

should be available locally, such as aluminum ingot, sheet iron, HRS iron, bolts and nuts etc& any
other tools. The four parameters defined as flows. The following is the way done to analyze the value
chain in manufacturing small scale improve dough mixer machines product. The main Chain and Sub
Chain is listed to use the four parameters, which are the yield, quality, cost and time, so as to compare
already the benchmark VS the AS IS. Since using this approach, we can clearly see the difference
between the two elements.
Yield – refers to level or number of output acquired.
Quality – refers to the level of standard applied.
Cost– refers to the amount of money allotted in specific activities.
Time – refers to the specific duration, time limitation in performing the activities.

5. BENEFICIARIES
This proposed machine is intended for mixing dough. More particularly, this machine
related to formation of Breda, pizza powder. In the other hand, this machine can be
transferred to MSE’s to solve their technology gap
Trainers in federal TVET in institute will be benefited on this project by enhancing their
skill and knowledge through active participation in production of this project.
TVET trainers can also enhance their knowledge and skills in the designing and actual
production of this project. Lastly, the machine can be produced by TVET trainer’s
capacity.
The MSE would also benefit a lot on this design by making mass production and sell the
products to the society bakery shop.

6. CONCEPT OF DESIGN
There are two facets of the concept of design. Firstly, a design is a plan to bring
about a man-made product. Such a plan must achieve a prescribed goal and satisfy
certain constraints. Secondly, it is a process of the creative development of such a
plan. During this process, the designer must use related scientific principles,
technical information and imagination to discover constraints and to solve the
design problem. Therefore, we can define engineering design as follows.
Engineering design is the use of scientific principles and technical
information in the creative development of a plan to bring about a man-made
product to achieve a prescribed goal with certain specified constraints.
The consequence of the implementation of the design will bring changes to the
environment, while the environment of the designer influences the design itself.
Dough mixer machine design is a branch of engineering design where the product to bring about is
dough mixer process .

11. TEST METHODS AND RESULT
11.1. Test method
Check the base is appropriately assembled.
Check the standing is enough for holding the motor and housing with
the top.
Before operating the machine check the pulleys are have porosity or
not.
Check the alligemante shafts are equal or not.
Check the belts are available according to the specification and that
belts are have tension or not.
The housing is correctly alignment.
Check all the accessories are fixed (assembled).

Raw Material Cost
Before making, the product determining cost analyses is very essential and important since to make
high production rate. So that selection of material is always depend on its cost which is available in
our area.
Building manufacture of dough mixer machine
Most of the material to use should be available locally, such as aluminum ingot, sheet
iron, HRS iron, bolts and nuts etc & any other tools.
Project Budget
It is important that the designer develops skills in estimating costs of designs in order to secure the
most economic features. This entails being aware of the breakdown of products cost and the various
cost stops that exist in an organization. These have to be broken down in to individual units to
calculate the overall cost of the product.
To put together these individual costs but they can be represented by three basic costs which are;-
Material cost, Labor costs, Power costs.

As it has been discussed through out of this dough mixer machine could be manufactured under the
available material and processing condition in most metal workshops. The manufacturing process
including the most common type like turning facing drilling, welding, grinding, bending cutting etc.
The technical that is going to manufacture the dough mixer machine has the freedom to achieve the

therefore every users should be trouble free on buying, working and using this machine.
