PREMISE

These use and maintenance instructions have been prepared to make it easier for operators and personnel involved in
transporting, handling, installing, using and maintaining the machine to get to know the machine.
The instructions contain extremely important information regarding the safe and proper operation of the machine.
Observing these operations helps to prevent potential dangerous situations, additional costs and wasted time while
increasing the mechanical life of the machine.
The service instructions and safety precautions given in this document must be observed by the user and the installer
for safe and correct use of the machine.
In addition to the service instructions and accident prevention regulations, which apply in the countries and places of
installation, all general occupational safety rules must be observed.
It is therefore recommended that you carefully read and understand the instructions in this manual.
This document is subject to disclosure or duplication or copying, unless approved by the manufacturer.

1 Introduction

1.3 Machine Identification - CE Plate


The identification plate is attached to the machine.
On it are shown the CE mark, the manufacturer's identification data, the serial number and year of construction and
other significant data for the operator.
For any requests for spare parts or interventions by our technicians, refer to the data on the plate of the machine, in
particular always mention the serial number and the year of manufacture of the machine.

1.4 Guarantee

The manufacturer guarantees this machine model for a period of 24 months from the date of purchase indicated on the
tax document at the time of delivery of the machine.
The warranty is void if the machine has been repaired by an unauthorized third party or if equipment or accessories are
used that are not supplied, recommended or approved by the manufacturer.
The warranty is also void if the plate bearing the serial number or other data has been removed or altered.
The manufacturer undertakes to repair or replace, free of charge, those parts that have manufacturing defects within the
warranty period; Labor costs are not included, and will be charged to the customer.
In the event of repairs to be carried out on site, the machine must necessarily be sent to the manufacturer using all the
necessary measures during transport to ensure that there is no damage during transport.
Transport costs, during the warranty period, will be borne by the manufacturer.
The warranty does not cover the possible cleaning of the working parts.
Defects not clearly attributable to the material or workmanship will be investigated. If the claim is found to be unjustified,
all repair, replacement and transport costs will be charged to the buyer.
However, the following are excluded from the warranty:
• accidental damage occurring during transport
• damage caused by negligence or by incorrect cleaning, maintenance and use procedures
• damage caused by improper use or use that does not comply with the warnings in this manual
• parts subject to wear and tear, such as those listed here, but not limited to: gaskets, motion transmission elements,
filtration systems, food transport elements (for example: wire mesh mat, other belts), pipes for conveying fluids, protective
membranes for control panels, etc.
Improper structural damage, modifications, alterations or repairs may modify the functionality of the safety devices, thus
voiding the validity of the machine's declaration of conformity and the warranty; Modifications must therefore only be
carried out by technicians authorised by the manufacturer.

1.5 Purpose
This manual is intended for operators and specialized personnel in order to allow the correct safe use of the machine.
Inside the operator will find the following descriptions and information:
• A functional description of the machine and each of its parts;
• Information on the safety of the machine and the accident prevention rules to be followed;
• Proper installation of the machine;
• Proper use of the machine;
• Proper routine and scheduled maintenance of the machine.

1.6 How to store the manual


Use the manual without damaging all or part of its contents.
It is forbidden to remove, tear or rewrite parts of the manual for any reason.
Store the manual in an environment protected from moisture and direct heat sources.
It is recommended to keep the latest revision of the manual so that it is made available to interested parties, and in case
of damage to the manual itself it can be requested from the manufacturer within the time required by law.

1.7 How to read and understand the manual


This document is structured in chapters, each of which deals with a specific category of information and is therefore
intended for operators involved in the various phases of the machine's life (installation, commissioning, use,
maintenance, decommissioning).
In addition, each chapter is in turn divided by specific arguments related to the macro-topic covered by the chapter itself.
To facilitate the reader's access to the information, it is recommended to make use of the table of contents and the table
of contents within the document in order to quickly find the information sought.

1.8 General description

The machine described in this document has been designed to be:

Spray booth, painting dedicated to the decoration with cocoa butter, food colors and jellies of subjects in chocolate,
pralines and bars, semifreddos, single portions, cakes, biscuits and polycarbonate molds.
The machine is equipped with a heated cabin that allows you to keep the colors, cocoa butter and the equipment
necessary for decoration fluid during work breaks. It also allows you to insert up to 7 trays of 60x40 cm thanks to the
special guides mounted on the sides.

2.4 Noise emissions

Noise tests carried out with the machine running in the vicinity of the workstation showed an equivalent A-
weighted sound pressure level of less than 85 dB (A). However, the machine may be placed in an
establishment where the cumulative equivalent A-weighted sound pressure level may exceed the limit
value of 85 dB (A). In this case, the use of appropriate hearing protectors is recommended.

4 Safety
Before undertaking any operation on the machine or parts of it, it is essential to read this manual carefully;

SELMI s.r.l. declines all responsibility for improper use of the machine, not reported in the instruction manual;
The machine should only be used for the intended use stated in this manual;
It is recommended to keep the manual at hand at all times at the place where the machine is used;
This manual and the attached documents must be considered integral parts of the machine to which they refer and must
always accompany the machine even if it is transferred to another user; It is therefore advisable to keep them for future
reference;
In the event of breakage of mechanical elements or extraordinary breakdowns, please immediately notify the SELMI
S.R.L. maintenance service.

DO NOT use this manual and the attached documents to carry out operations on other machines,
even similar ones.

In the event of breakage of mechanical elements or extraordinary faults, we invite you to immediately
notify the SELMI S.R.L. maintenance service.

In the event of damage to certain components or failure of the drive system, stop the machine and immediately contact
the SELMI S.R.L. maintenance service to repair the fault or replace the damaged component.
Repairs should only be carried out by qualified and properly trained personnel;

5 Staff levels and qualifications
Work on the machinery must only be carried out by reliable and qualified personnel.
"Qualified personnel" means workers who, on the basis of their professional and educational skills, have acquired specific
experience and knowledge of technical standards, accident prevention regulations and operating conditions.
Such personnel must be able to carry out the required operations and to detect and prevent possible hazards in advance.

5.1 Types of operator

General operator: operator without specific skills, able to perform only simple tasks on the instructions of
qualified technicians.

Electrical maintenance technician: qualified technician able to use the machinery in normal and
maintenance conditions; he is in charge of all electrical adjustment, maintenance and repair interventions.
It is able to operate in the presence of voltage inside cabinets and junction boxes (PES CEI 11-27
qualification or qualification according to the standards in force in the country of installation).

Mechanical maintenance technician: qualified technician able to use the machinery in normal conditions,
to intervene on the mechanical parts to make the necessary adjustments, maintenance and repairs. This
operator is not authorized to carry out work on electrical systems in the presence of voltage.

Manufacturer's technician: qualified technician made available by the manufacturer to carry out operations
of a complex nature in particular situations or in any case what has been agreed with the user (installation,
initial start-up, extraordinary maintenance).

electrical work; he/she has the ability to assess risks, implement the necessary protective measures and deal with
unforeseen events that may occur during electrical work; in short, he/she is able to organize and carry out out-of-voltage
electrical work independently.

6 Safety Regulations
6.1 Transport
The machine is transported in a single package or sectioned into several packages in the following road transport modes:
carton pallet or wooden cage with protective sheets and other packaging materials.
The elements of the machine must be properly fastened, by means of special straps, to the loading platforms of the
vehicles in order to avoid damage during the journey.

6.2 Handling & Lifting


The machine must be handled only with equipment with a capacity appropriate to the total weight of the element being
handled;
For lifting and handling during installation, follow the following safety instructions:
1. Assign only qualified personnel to lift loads;
2. Lift the element using lifting equipment that complies with the safety standards and laws in force and has a maximum
capacity greater than the weight of the element;
3. It is strictly forbidden to linger under the lifted load;
4. Before lifting, check the stability of the machine and/or its components on the vehicle;
5. ACCIDENT PREVENTION REPORTS

ALWAYS CHECK, BEFORE THE HANDLING PHASE, THAT THERE ARE NO MOVING PARTS
THAT COULD FALL; IN THIS CASE, PROPERLY FIX THEM;

OPERATIONS;

IN ANY CASE ALWAYS MAKE SURE THAT THE MACHINE IS SOLIDLY FITTED TO THE
ROPES AND APPROPRIATELY BALANCED;

DO NOT LEAVE THE MANEUVERING PLACE LEAVING THE LOAD SUSPENDED;
DO NOT STAND OR TRANSIT UNDER THE SUSPENDED LOAD;

6.3 Unloading the machinery

Before moving the machine, always check the weights and general information on the packaging.
Personnel not involved in the work must not remain in the area involved in the movement.

It is necessary to maintain the vertical position of the package during handling, to avoid damage to the internal components of
the machine and possible leaks of coolant if present

If the machinery is equipped with a refrigeration unit, if it is tilted during transport it is necessary to wait a minimum of 8 hours
from installation to start-up, this to avoid possible problems with the compressor.

If the package is equipped with it, on the sides of the external packaging, there may be a device called "TILTWATCH" which
serves to determine whether the packaging has undergone an inclination which may have damaged the contents; you must
pay attention to the instructions on the sticker. If the machine was tilted more than necessary during transport operations (the
circle in the center of the device is colored red) some parts may have been damaged.

The manufacturer will not be able to recognize under warranty any damage occurring during transport; the buyer is required
to follow the instructions on the sticker to avoid disputes.

If the package of the machinery is not equipped with a TILTWATCH and during unloading of the machinery you notice any
discrepancies or breakages, it is necessary to sign with reservation to the courier, in order to open a case with the carrier, the
manufacturer will not be able to recognize any damage under

6.4 Installation Safety Requirements
In addition to the regulations in force in the country of destination, the following requirements must be observed:
• All connection cables must be securely connected in order to avoid any contact between the phases.
• access to the machine's electrical panel must be carried out only by suitably trained electrical maintenance
technicians or by managers appointed by the customer and trained by SELMI s.r.l.
• Operators involved in the installation, assembly, operation and maintenance of the machine must wear suitable
personal protective equipment in relation to the type of activity performed on the machine (safety footwear,
mechanical risk gloves, work clothing).
• Do not make structural or wiring changes to the machine (e.g. welding, disconnecting the machine, modifications to
the electrical system or modifications to guards and tampering with safety devices). The manufacturer specifies that
any modification carried out without its explicit authorization will void the CE marking of the machine and any warranty
of sale.

6.4.1 Space required for use and maintenance


The choice of the installation site is dictated by specific needs for unloading pieces but must take into account that the
operator must be able to operate around the machine without any impediment, it is therefore advisable to pay particular
attention to what is reported in this paragraph in relation to the minimum distance between the machine and other
machinery or walls. It is necessary to consider that the following conditions may occur during the work phases:
• Removal of elements or embedded material;
• Inspection of electrical parts and possible repair or replacement;
• Engine maintenance;
• Cleaning the machine.
Check which regulations on health and safety in the workplace are in force for the application of prevention and protection
methodologies and standards. The Decree provides for a careful analysis of the minimum spaces necessary for the use
and maintenance of the machine, also aimed at avoiding the occurrence of dangerous situations. Therefore, it is good to
remember that:
• A confined workspace can facilitate accidents due to, for example, the presence of machine equipment.
• The determination of the space required for the use and maintenance of the machine is therefore characterized by
numerous variables of different nature interacting with each other. There is therefore a need to deal with every
business situation in a comprehensive and articulated way.

6.5 Connecting the Machine to Power Sources

The configuration layout of the machine must allow the wiring of the power and distribution cables and the methods of
installation envisaged.

6.5.1 Placement

The machine must be placed on a flat floor.


The flooring must have a sufficient load capacity to support the weight of the machine.
The machine is equipped with 4 pivoting wheels equipped with an engageable brake positioned at the top of the lower
surface.

6.5.2 Pneumatic connection of the machine

Air characteristics: filtered, dry, de-oiled.

6.5.3 Pre-commissioning checks
On the electrical panel to which the machine is connected, carry out the following checks:
• Visual check of the correct arrangement of any modules making up the panel (if the latter consists of several
compartments).
• Check the tightness of the compartment coupling screws.
• Checking the tightness of the barred connection bolts.
• Control of power and auxiliary connections.
• Check that there are no tools or foreign bodies inside the panel.
• Verification of the correspondence between the voltage supplied by the distributor and the nominal voltage of the
installed equipment.

Please note that the Employer is required to periodically check the efficiency of the ground circuit of
the place where the switchboard is installed, carrying out measurements in accordance with the
regulations of the user's country.

6.6 Maintenance safety requirements
In addition to the general technical requirements issued by the local authorities, the following provisions must be
observed:
• Residual risk assessment must be conducted on all machine functions.
• Inspection and maintenance operations must be carried out by qualified and specialized personnel who are
familiar with the instructions in this manual. Qualified and specialized personnel are defined as people with a
suitable educational qualification and an adequate level of skills and who have acquired experience and

• All maintenance tasks must be carried out following a safe stop of the machine and by cutting off the power
supply.
• If the machine is stopped during maintenance and repairs, it must be protected from unintentional restarting, for
example by affixing a sign on the main switch(es) indicating that the machine is in progress (see Figure 2).
• Use only the tools that are suitable for maintenance and repair work: Use only the tools that are suitable for the
required work.
• Spare parts must meet the technical requirements set by the manufacturer.
• The electrical equipment of the machine should be periodically inspected and examined. Any defects on
components must be immediately reported and replaced following a careful evaluation of the effectiveness and
efficiency of the components themselves.
• If work is to be carried out on live parts, have a second person intervene to operate the emergency switch or
main switch in an emergency. Isolate the site of intervention with a red-white chain or affix a warning sign. Use
only tools that are insulated against electrical voltage.

7.1 Intended Use
The decoration booth that is the subject of this manual has been designed and built to carry out the process of painting
the moulds with the product intended for food use.

9 Using the Machine
Warning: The food product in the moulds used with the machine must never come into contact with water or other liquids,
in order to avoid the risk of mould formation with the consequent formation of bacterial loads. In case of cleaning with
water, it is necessary to wait until the machine or the molds are completely dry.

Warning: If bacterial loads are detected on the product from the processing carried out with this model of
machine, it will be necessary to stop production immediately and contact the manufacturer for sanitization
procedures.

9.1 Ignition and shutting down the machine

To turn on the machine you need to:

1. Check that the emergency button (N.1 image below is disengaged)


2. Set the selector switch (n.2 figure below) to the ON position

9.1.1 Start

With button 4 it is possible to heat the storage compartment of the trays to keep them at the desired temperature, using
a resistance that heats the air and a fan, setting the temperature using buttons no. 5 and 6, viewing the actual temperature
measured on display no. 2.

To start using the machine, you need to press:


button no. 8 to activate the suction in the spray chamber,
button no. 13 if you want to use the turntable, which can then be controlled via pedal no. 12.

The machine is equipped with double pneumatic power supply: you can choose whether to use it via an internal
compressor or an external pneumatic system:
• In the first case, press button no. 7 to turn on the compressor.
Then adjust the airflow via regulator No. 11.

• Otherwise, it will be necessary to connect the compressed air to connection no. 10 and adjust the flow rate again from
regulator no. 11.

Direct or stand-alone compressed air connection

The Chocopaint can work either connected to a compressed air system or autonomously using its compressor.

1. Connection to external compressed air system

- Connect the compressed air hose into the pneumatic connector (n.3 ref.8.2)

- open the pneumatic valve number 2 in the image below and close the valve number 1; To access these valves,
it is necessary to open the side casing of the electrical panel.

- The final situation should be as shown in the image below

In this way the machine will be powered by the external pneumatic line, and it will be possible to adjust the air pressure
through the regulator n.11 (ref.8.7)

2. Using the Internal Compressor

If you intend to use the machine through the compressor inside the machine, you must position the valves opposite to
the previous one: n.1 open and n.2 closed.

You must then activate the compressor through button n.7 (ref.8.7):

In this way, the compressor will manage itself: it is necessary to have button no. 7 (ref 8.7) when using the machine, so
that the air pressure is always set.

9.2 Safety Devices
9.2.1 Emergency stop buttons
One or more emergency stop buttons with self-restraint of the "mushroom" type, compliant with the
EN 418 standard, are installed on the machine, red on a yellow background with absolute priority in
all operating modes with respect to the other functions and activations.
If necessary, the machine can be stopped instantly by pressing any of the emergency buttons. Once
pressed, the power supply and the power supply of the auxiliaries are disconnected, causing the
immediate stop of the motion parts.

Consult the machine's manual before use;

To restore normal working conditions, in the event of an emergency stop following the pressing
of the aforementioned buttons, the following procedure must be followed:

The emergency circuit of the machine has been designed and built to be redundant.
In this way, in the event of a fault on a component of the emergency circuit, the machine will stop until the fault is
repaired.
With this type of emergency circuit, we will therefore always have all components of the emergency circuit ready to
intervene in case of danger.

10 Commissioning
10.1 Pre-Checks and Installation Preparations

Before start-up, you must:

• Always keep the protections and safety devices in perfect working order, respecting the periodicity of the checks
and maintenance, as indicated in the manual; In the event of a fault, these must be repaired immediately or replaced
with original spare parts.

When starting the machine for the first time, at least the following verification operations must be carried out:
• Checking that the safety devices are working correctly. Make sure that the machine cannot be started if all safety
devices (e.g. emergency buttons) are not fully efficient.

log in this manual. This section describes the control and routine maintenance operations that are essential to ensure
the smooth operation of the machine.

Any other work that may be necessary to rectify faults or operating anomalies must be expressly authorised by the
manufacturer. For major repairs, it is advisable to contact the manufacturer.
For the maintenance or replacement of commercial components installed on the machine, follow the instructions
provided directly by the respective manufacturers. These particulars are usually attached to the components or can
be found in the catalogues or manuals provided by the manufacturers themselves.

Warning: During maintenance work, a sign must be placed on the machine, possibly on the control console or in any
case in a clearly visible position, indicating: "MACHINE UNDER MAINTENANCE DO NOT START".

It is the precise duty of the employer / user safety manager to ensure the professionalism and competence of the
maintenance technicians who carry out the above interventions.

Before undertaking maintenance work, it is necessary to make sure that:


• the work area is adequate for proper maintenance.
• the lighting is sufficient in relation to the work to be carried out.
• The maintenance technician wears the following personal protective equipment: gloves for mechanical risk,
safety goggles, safety footwear, gloves for chemical risk and all the safety devices prescribed by
the regulations in force in the operator's country.
• Make sure that the maintenance technician has carefully read the instructions in this manual and is
fully familiar with the operation of the machine.

At the end of each maintenance intervention, it is necessary to:


• By means of a thorough cleaning, remove any residue that may make the flooring slippery in the work area.
• Reposition and lock the fixed guards, check the functionality of the interlocks and safety devices.

11.2 Replacing the Cab Filter


To replace the cabin filter you need:
- Remove the 4 knobs that lock the filter in place (see image below)
- Remove the two locking brackets (ref. A,B image below)
- Remove the used filter and insert the new filter into place, then proceed to close the brackets with the appropriate
knobs

12 Extraordinary maintenance

12.1 Maintenance of electrical systems

BEFORE PROCEEDING WITH ANY OPERATION, MAKE SURE THAT ALL POWER SOURCES ARE
DISCONNECTED.

Always carefully check the insulating coatings, terminal blocks, and enclosure tightness; the sealing gaskets, if not
correctly positioned or if damaged, cannot guarantee the IP degree of protection declared by the manufacturer.
Replace the sheaths and cables and their insulating part if it is damaged or damaged.
Check and reset, if necessary, the labels and cable ties for the identification of the wires and components, following
the directions on the wiring diagram.
Make sure that the electrical panel identification plate and the electrical hazard sticker are perfectly legible and well
fixed; if not, replace them by asking the manufacturer.
The replacement of fault control components must always be carried out in compliance with current regulations, using
components with technical characteristics that comply with those of the devices to be replaced.
All operations on the electrical system must be carried out by qualified technical personnel.

12.2 Replacing the fuses

To replace the fuses, you must:

1. Turn off the machine.


2. Remove the electrical power plug.
3. Open the electrical panel. (Ref. chapters 8.5 - 8.6)
4. Remove the fuses by checking their continuity with a tester in order to ascertain any faults.
5. Replace the failed fuse with an equivalent fuse (same electrical characteristics).
6. Close the electrical panel.
7. Reconnect the electrical power plug.
8. Turn on the machine.
9. Carry out a functional test of the duty cycle.

Note: Carry out the continuity test of the fuses, taking care not to place them on a surface of
conductive material.

Warning: If the fuses blow repeatedly, contact the technical support service.

12.3 Replacing the display

In case of replacement of the display board (Ref. Chapters 8, item 3) you need to:

1. Turn off the machine.


2. Remove the electrical power plug.
3. Open the electrical panel.
4. Remove the display connection connector.
5. Unscrew the fasteners and remove the display.
6. Place the new display on the stands and secure it as before.
7. Reinsert the display connector.
8. The display is a component sensitive to electrostatic charges; We recommend handling it with caution and
not letting it come into contact with metal parts while it is powered.

12.4 Wearing Components

Caution: components that are subject to their own wear and tear must be checked strictly and replaced as
soon as they show significant signs of wear.

The manufacturer has designed and built the machine in order to limit wear as much as possible, however due to
use and service life the wear may be more noticeable.
In this regard, it is recommended to carry out an accurate visual inspection of the main components subject to wear
and tear, such as, but not limited to: gaskets, motion transmission elements, filtration systems, elements for
transporting food products (wire mesh mesh mat, other belts), pipes for conveying fluids, protective membranes for
control panels, Etc.

If structural deformations or veins are found in metal parts or welds, the manufacturer's after-sales service should be
consulted immediately.

Due to their construction characteristics, heating elements can suffer a reduction in insulating power over time,
especially when exposed to high degrees of humidity;

Check the functionality of the differential cut-off device placed to protect the machine's power socket.

12.5 Decommissioning and dismantling of the machine

In case of need to proceed with the disposal/scrapping of the machinery, contact a specialized company for the
disposal of the same.
