Keto Mediterranean Flatbread

Ingredients:
120 ml (50 g) coconut our
1 tbsp. psyllium husks powder
60 ml olive oil
240 ml boiling water
80 ml grated Parmesan cheese or mozzarella cheese
½ tsp. sea salt
¼ tsp. Granulated garlic
½ tbsp. Black peppercorns
½ tbsp. dried rosemary

Instruc ons:
1. Mix the dry ingredients in a bowl with a whisk.
2. Add the olive oil and cheese.
3. Lastly, add the hot water, s rring the mixture as you do so. Keep mixing un l
the psyllium and coconut our have absorbed all of the water.

4. Fla en the dough on a sheet of parchment paper. Roll out the dough with a
rolling pin or your ngers un l it is at and even. Make sure it is the same
thickness all over and is not thicker than 1/3 cen meter.
5. Bake at 350ºF (175ºC) for 20 to 25 minutes. The baking me will depend on the
thickness of the dough.
6. When the bread is golden, transfer to a wire rack and remove the parchment
paper to cool. Use a pizza cu er to cut the atbread into squares. You can use it to
make sandwiches. If you have le overs, you can store them in the refrigerator.

Tip:
You can change the seasonings according to your tastes. The cheese can also be
omi ed to make the recipe dairy-free.

Keto Cornbread
Prepara on me: 5 minutes • Cooking me: 30 minutes
Ingredients:
1/2 cup of almond our
1/3 cup coconut our
1 tsp salt
1/2 tsp baking soda
3 eggs
1/2 cup heavy cream
1/4 cup salted bu er, melted
bu er to grease the pan

Instruc ons:
1. Gather your ingredients. Preheat the oven to 325 F. (162 ° C)
2. Add the almond our, coconut our, salt, baking soda, eggs, and heavy cream to
a mixing bowl. Beat together un l just combined.
3. Add the melted bu er and con nue mixing un l all the ingredients are
incorporated.
4. Generously grease a 9- or 10-inch cast-iron skillet with bu er. Pour the ba er
into the greased skillet.

5. Place in the preheated oven and bake for 25 to 30 minutes or un l golden
brown and rm.
6. Let the cornbread cool for about ve minutes, and then slice it. Serve with
bu er.

8. Keto Jalapeño Cornbread: Add 1/4 cup diced canned green chili peppers to the
ba er and top the cornbread with fresh jalapeño slices.
9. Keto Bacon Cornbread: Add 1/2 cup cooked crumbled bacon to the ba er. Top
the cornbread with more crumbled bacon.
10. Keto Cheesy Cornbread: Add 1/3 cup of shredded cheddar cheese or Mexican
blend cheese to the ba er. You can also add more grated cheese to the top of the
cornbread.
11. Try combining all three varia ons to make a tasty cheesy bacon and jalapeno
cornbread.

Tip:
Make sure you grease your cast iron skillet heavily. This helps create a nice crust
and adds more avor while preven ng the bread from s cking.

Use this cornbread as the base for a keto cornbread lling or topping.

You can also bake this recipe in mu n ns. Just be sure to grease the mu n n
wells with bu er or use mu n ns.

Keto Cake Bread
Prepara on me: 15 minutes • Cooking me: 35 minutes
Ingredients:
Almond powder (or whole mixed almonds): 150g
Coconut our: 15g
Flax seeds: 40g
Sodium bicarbonate: 1 teaspoon
Salt: 2 pinches
Coconut oil: 30g
Honey (or maple syrup) op onal: 10g
Walnut vinegar (or other vinegar): 1 tablespoon
Eggs: 4

Instruc ons:
1. Start by prehea ng your oven to 180 ° C.
2. Using a mortar or a co ee grinder, pound the ax seeds (if not, put them as they
are!)
3. In a bowl, mix all the "dry " ingredients (ground almonds, coconut our, ground
ax seeds, baking soda, and salt)
4. In another bowl, mix all the "wet" ingredients (coconut oil and lique ed honey,
vinegar, and eggs)

5. Then pour the liquid on the dry while mixing. (You can also mix everything with
a blender!)
6. Fill a cake mold to ¾ and bake for 35 min, reducing the temperature of the oven
to 170 ° C.
7. If the bread stains too quickly, put a sheet of baking paper on it.
8. And There you go! The consistency is between bread and a cake.

Keto Cup Bread
Prepara on me: 2 minutes • Cooking me: 3 minutes
Ingredients:
1 tbsp. melted bu er
1 tbsp. almond our
1 tbsp. Coconut our
¾ tsp. Baking powder
½ tsp. poppy seeds
1 pinch salt
1 egg beaten
1 tbsp. cream (or cream) to mount

Instruc ons:
1. Mix all the dry ingredients in a bowl. Add an egg, the melted bu er, and the
cream. Blend un l smooth and make sure there are no lumps.
2. Pour the mixture into the mug and cook in the microwave on high power (about
700 wa s) for 2 minutes. Check if the bread is done in the middle. If not,
microwave for another 15-30 seconds.
3. Let it cool down and remove it from the mug. Cut it in half and toast it; this way,
you get a be er texture and avor.

Instruc ons for preparing in the oven:
1. Preheat oven to 350 ° F (175 ° C) and grease an 11cm ovenproof bowl with
bu er. (Bu er for greasing is not counted in the ingredient list)
2. In a medium bowl, whisk together all dry ingredients, including poppy seeds, if

will have the mixture ready for 10 servings. Use two generous tablespoons for
each piece of bread.

Keto Coconut Bread
Prepara on me: 10 minutes • Cooking me: 40 minutes
Ingredients:
6 eggs
120 ml (110 g) coconut oil, melted
120 ml (50 g) coconut our
¼ tsp. sea salt
¼ tsp. baking powder

Instruc ons:
1. Preheat the oven to 350 ° F (175 ° C).
2. In a large bowl, beat the eggs and add the melted coconut oil.
3. Add the dry ingredients in the same bowl and s r un l the mixture is
homogeneous.
4. Grease a small rectangular mold and ll up to 2/3 with the dough. Bake for
40-50 minutes, or un l a knife comes out clean.

Note:
Did your bread turn green a er baking? It can happen with this recipe. Don't
worry; it is perfectly safe to eat.

The green color is the result of a chemical reac on between the leavening agent,
in this case, sodium bicarbonate, and chlorophyll or chlorogenic acid. This reac on
is more common in recipes that use sun ower seeds, but it can also occur with
other ours.

To prevent this from happening, you can reduce the amount of baking powder to a
third and/or add a couple of teaspoons of vinegar or lemon juice to the wet
ingredients before adding them to the dry ones.
