CHAPTER 1
Introduction
In recent times, a shift has occurred toward healthier eating habits and a greater
interest in new food products. Sweet potatoes, noted for their nutritional value and
adaptability, have become a popular ingredient in a variety of culinary applications.
Sweet potatoes are extremely nutritious and provide numerous health advantages.
Additionally, Sweet potatoes include vital nutrients such as potassium and manganese.
Doughnuts, typically regarded as delicious and less health-conscious, offer an
opportunity for innovation by including sweet potatoes. Donuts have a complex history
spanning centuries, beginning with early European fried dough recipes and evolving
greatly in the United States. Dutch settlers introduced the concept of "olykoeks" to
America in the 17th century, which evolved into the donuts we know today. This
progression continued with innovations like the donut hole, which was introduced in the
mid-nineteenth century.
Sweet potatoes are high in vitamins A and C. A medium-sized sweet potato has
more than 400% of the daily required amount of vitamin A, which is essential for vision,
immunological function, and skincare. They also contain adequate amounts of vitamin C,
which is essential for immunological function and skin health. Donuts have been
consistently a popular delicacy, known for their sweet, typically fried dough and a wide
range of flavorings. Donuts are famous for their excellent taste and are typically
consumed in several ways, including classic glazed and filled varieties. However, as
people's health knowledge has increased, so has the need for healthier alternatives.
Consumers become more drawn to products that combine enjoyment and wellness. This
trend reflects a larger drive toward healthier eating without compromising flavor or
enjoyment. This study investigates how sweet potatoes, with their high nutrient profile of
vitamins A and C, fiber, and antioxidants, improve the taste and health value of donuts.
Exploring this blend of flavor and nutrition reveals how sweet potato donuts can satisfy
cravings while also benefiting nutritional health.
This research is significant because it tackles the possibility of increasing the
donut market with a healthier alternative. By including sweet potatoes, a nutrient-dense
ingredient, this product could appeal to health-conscious consumers while still providing
a distinct taste experience. The major goal of this study is to investigate the viability of
sweet potato donuts as a novel market product. This includes determining the feasibility
of adding sweet potatoes into donuts, gauging consumer approval, and assessing the
possible benefits and drawbacks of this product innovation.
