Aim: To effectively plan, prepare, and present a high-quality pastry


product that meets the criteria in terms of flavour, presentation, texture,
hygiene, and creativity.

Identification and Discussion of Issues


Time management is a key factor in deciding which pastry product to
prepare as the chosen recipe may require multiple steps such as dough
preparation, resting, proofing, and baking. These processes need an
organised time plan to complete to prevent rushing, ensuring the final
product is properly made. Following this, safety and hygiene are essential
to completing this task. The chosen recipe must be able to maintain
cleanliness, specifically when handling ingredients like flour and eggs. The
correct procedures will be followed to prevent accidents with hot
equipment or sharp utensils. The chosen recipe should contain balanced
and tasty flavours. The ingredients incorporated should complement each
other, while avoiding overly sweet, bland, or overpowering flavours. The
dish chosen should be able to be presented neatly with options to
decorate it with glazes or icing. The pastry’s texture should be crispy,
flaky, and tender. Consistency in baking is essential to achieve this. The
recipe should allow room for creative twists, such as unique fillings shapes
or toppings, to highlight originality and creativity.

Decision: The chosen recipe is apple Danish.


Justification:
1. Requires multiple steps to prepare such making the apple filling,
glaze and crumble which require an, resting, proofing and baking.
These steps need an organised time plan to avoid rushing and
allows for demonstrating strong planning and time management
skills.
2. Making an apple Danish involves working with raw ingredients such as
eggs which demonstrates skill in observing hygiene protocols, working
safely and using knives and hot ovens.
3. The buttery pastry, pairs well with the spiced apple filling, making it a
recipe that involves a balanced flavour profile.
4. The Danish can be shaped into unique shapes and can be topped with
icing or glazes to showcase presentation skills.
5. The Danish is a layered, flaky, and soft filling which needs precise
techniques to produce.
6. This recipe allows room for creativity through different fillings, shapes,
or toppings, showcasing our originality in pastry design.

Implementation:
