unique flavors of the beans. This guide will walk you through the steps to achieve a café-
quality brew at home.

Ingredients:
Freshly Roasted Co ee Beans: Quality starts here. Use beans roasted within the
last few weeks.
Filtered Water: Co ee is over 98% water, so good water is crucial. Avoid tap water if
it has a strong taste.
The Golden Ratio
A great starting point for any brew method is a co ee-to-water ratio of 1:16. This means for
every 1 gram of co ee, you will use 16 grams of water.
For a single mug (about 300ml):
Co ee: 20 grams
Water: 320 grams (or 320 ml)
The Step-by-Step Method
Total Brew Time: Approximately 3 - 4 minutes.
1. Heat Your Water: Bring your filtered water to a boil, then let it sit for about 30-60
seconds. The ideal brewing temperature is between 90°C and 96°C (195°F and
205°F).
2. Grind Your Co ee: While the water is heating, weigh out 20g of co ee beans. Grind
them to a consistency resembling coarse sea salt.
3. Prepare the Filter: Place the paper filter into your dripper. Pour some of your hot
water over the filter to rinse it thoroughly. This removes any paper taste and
preheats your dripper and mug. Don't forget to discard this rinse water from your
mug.
4. Add Co ee and Tare the Scale: Place your dripper and mug on the digital scale. Add
your 20g of ground co ee into the filter, giving it a gentle shake to level the bed.
Press the "tare" button on your scale to zero it out.
5. The Bloom (0:00 - 0:45): Start your timer. Begin pouring water slowly and evenly over
the grounds, starting from the center and moving outwards in a spiral. Pour just
enough water to saturate all the grounds—about 50g. You will see the co ee bed
"bloom" or bubble up as it releases trapped CO₂ gas. Let it sit for about 45 seconds.
This step is crucial for an even extraction.
6. The Main Pour (0:45 - 2:30): After the bloom, continue pouring the remaining water in
slow, steady, concentric circles. Try to maintain a consistent water level in the
dripper. Pour in pulses, aiming to add all 320g of water by the 2:30 mark. Avoid
pouring directly on the filter walls.
7. The Drawdown (2:30 - 3:30): Once all the water has been added, allow the water to
drain completely through the co ee grounds. This should take another minute or
so. The total brew time should be in the range of 3 to 4 minutes.
8. Serve and Enjoy: Remove the dripper. Give your co ee a gentle swirl. Pour it into
your favorite mug, take a moment to savor the aroma, and enjoy your perfectly
crafted cup of pour-over co ee.
