Sensory Analysis: Sugar Water Tests

The Sensory Analysis Report details various tests conducted on sugar water and food products, involving 11 student participants aged 18-22. The tests include paired comparison, triangle, and duo-trio tests to assess differences in sweetness and taste strength among different concentrations of sugar water and beer samples. Results indicate varying levels of success in identifying differences, with some tests showing significant challenges in distinguishing between samples.

2.1. Paired comparison test

Receive 3 pairs of coded samples. With each pair of sample, taste them in the
order as they as they are placed on the tray from left to right and taste pair 1 to
pair 3 in turn. With each pair, indicate the sweeter sample
2.1.1. Sample preparation
- Prepare 11 sets of samples, each sample is about 100ml in a glass cup
- Each set includes 6 types of samples: Sugar waters have different
concentrations.

2.2. Triangle test

Receive 2 sets of the solution, each set has 3 samples. Each set constains 1
sample having a different concentration from two others. Taste from set 1 to 2,
from left to right of the tray with each set.
2.2.1. Sample preparation
- Prepare 11 parts of samples, each sample is about 100ml in a glass cup
- Each part includes 2 sets, and each set includes 3 samples: sugar waters have
different concentrations.
- All samples must be coded:
Set 1: Sugar water (6g/l): 681
Sugar water (12g/l): 105 – 456

- Analyze results using the statistical table of minimum n number of correct
judments for triangle test at probability level a=5%

- We have: X0.05 = 7
- Number of correct responses in Set 1 < value in the table (3<7).
So the difficult to identify the difference between sugar water (6 g/l) and 12 g/l
when two samples (12 g/l) are identical.
- Number of correct responses in Set 2 > value in the table (8>7).
So the easy to identify the difference between sugar water (8 g/l) and 10 g/l
when two samples (8 g/l) are identical.
2.3. Duo-trio test
Receive 2 sets, each containing 3 samples. In each set, the first sample from the
left is the reference sample. One of the 2 remaining samples is similar to the
reference sample. Taste the R, then the 2 oders, and indicate which sample is
similar to R.
2.3.1. Sample preparation

2.1. Paired comparison test

Receive 2 sample of beer coded. Taste them from left to right and indicate the
sample that has a stronger taste
2.1.1. Sample preparation
- Prepare 11 sets of samples, each about 100ml in a glass cup
- All samples must be coded:
+ Beer A: A
+ Beer B: B
- The number of occurrences of the 3 samples is the same, 25 times.
- 25 glasses of clear water, each 200ml

9 B-A A
10 B-A B
11 B-A B

- The results after the experiment were 18 points for product B, 15 points for
product A
- From here, we can conclude that the preferences of the samples are different
according to the Fredman Test.

(*) χ = ∑
np( p+1) k=0
Ti2 – 3n(p+1)

In which:
+) n is the number of testers,
+) p is the number of products,
+) Ti is the sum according to the sample rank (i= 0,1,2,…,p)
- From the experimental results obtained and the equation (*)
12 2 2
 we get: χ2 = 11 x 2 ( 2+1 ) x (18 + 15 ) – 3x11(2+1) = 0.82

- Look up the table with the degree of freedom df = 1; α = 0.05

- We find a critical value of 3.841
- We have: χ2 < critical value (0.82 < 3.841) showing that there is no difference
between the products.
=> The two beer samples have no difference in taste strength
2.2. Triangle test
Receive 3 samples of soft drinks. 2 out of 3 samples are the sample while the
third is different. Taste samples in oder of them placed on trsy from left to right
and indicate the odd sample
2.2.1 Sample preparation
- Prepare 11 sets of samples, each sample is about 100ml in a glass cup
- Each set includes 2 types of samples: Coca-cola mixed with sugar and Pure
