They do, as do several other mathematicians. But I doubt that they think of their FOCS/STOC papers as central to their research. In fact, mathematics departments typically do not count FOCS/STOC papers as publications (for purposes of annual evaluations, tenure etc.) .

I agree that a few FOCS/STOC conference presentations adds a bit of jazz to a math cv (perhaps not so much as perhaps a PNAS or Nature publication but a little nevertheless) -- but they are certainly not treated equivalent to publication in a math journal.
