Malai Kofta For The Kofta:: How To Make Malai Koftha

This recipe is for Malai Kofta, a North Indian dish of potato and cheese dumplings in a creamy tomato and cashew gravy. The koftas are made by mashing boiled potatoes with paneer, khoya, malai, cashews, raisins, green chilies and spices. The potato mixture is shaped around a filling and deep fried. For the gravy, onions, garlic and ginger are blended with poppy seeds and fried, then tomatoes, spices and ground peanuts are added to make a thick sauce. The koftas are gently added to the gravy just before serving to keep them from becoming soggy.
