Honey Mustard Roasted Chicken

Ingredients: * 2 Large Potatoes * 2 Large Sweet Potatoes * 3 Carrots * 1 Chicken with Bones cut into quarters * 3 Cloves of Garlic peeled * 2 Bay Leaves and more... * 2 Large Potatoes * 2 Large Sweet Potatoes * 3 Carrots * 1 Chicken with Bones cut into quarters * 3 Cloves of Garlic peeled * 2 Bay Leaves * Rosemary * Basil * 1 cup chicken Stock * 1 teaspoon Cinnamon * 1/4 teaspoon Cloves Sauce: * 1 cup honey * 3/4 cup mustard * 1/3 cup mayonnaise * Salt * Pepper Directions: 1. Preheat oven to 280 degrees celsius. 2. Mix the honey, mustard, mayonnaise, salt and pepper in a small bowl. 3. Place the chicken in a large oven proof dish. 4. Brush the chicken generously with the honey mixture. Reserve 1/4 cup 5. Peel and cut the potatoes, sweet potatoes and carrots into large chunks. Arrange on top of the chicken. 6. Sprinkle the dish with the rosemary, basil, cinnamon, and cloves. 7. Arrange the bay leaves and the garlic cloves among the chicken pieces. 8. Pour the chicken broth and the remaining honey mixture on top. Liquid level should be not more than 2cm. 9. Mix the vegetables and chicken ensuring distribution of spices. Cover dish with foil and place in oven for 1.5 - 2 hours or until bottom starts browning. 10. Remove foil and leave in oven for an additional 20 - 30 minutes.
