Benefits of Using Coconut Oil

Coconut oil is naturally solid at room temperature and can replace butter in many recipes using a 1:1 ratio with little difference in the end product other than flavor. Coconut oil is able to perform the same functions as butter such as creaming and providing leavening. While it is high in saturated fat, proponents argue these fats are medium-chain triglycerides which are digested differently than long-chain triglycerides. Coconut oil is considered a more natural and less processed substitute for butter.

Overtheyears,manysubstitutesforbutterhavebeenderived,usuallybyhydrogenating
vegetableoils.Recently,however,moreattentionhasbeenpaidtoanvegetableoilthatis
naturallysolidatroomtemperaturecoconutoil.
Somecoconutoilisextractedfromcopra,sundriedcoconutmeat.Thisoilisusually
bleachedanddeodorized,anddoesnothaveanycoconutfragranceorflavor.Ifthemeatis
quicklydriedbyhotair(around80degrees),theoildoesnothavetobechemicallyprocessed
andisknownasvirgincoconutoil.Virgincoconutoilhasadelicatecoconutflavor.
Coconutoilissolidatroomtemperatureandhasameltingpointof78F.Thisislower
thanbuttersmeltingpoint,whichis90F,butcloseenoughthatitisasuitablereplacementin
mostcases.Coconutoilcanreplacebutterata1:1ratiowithlittledifferencetotheendproduct
asidefromflavor.(SeeTable1,AmericanButtercreamwithCoconutOil.)
Coconutoilisabletoperformthesamefunctionsasbutterinarecipeitcanbecreamed
withbuttertoprovideleavening(althoughcaremustbetakentoensurethattheoildoesnot
melt).Itis100%fatcomparedtobutters80%;howeveritisnotnecessarytoadjustthe
moisturecontentaccordinglyasitiswithshortening,ascoconutoildoesmeltataslightlylower
temperaturethanbutter.Coconutoilalsocontributesasimilarmouthfeeltobutter,duetoitslow
meltingpoint.
Thereisdebateastowhethercoconutoilisactuallyhealthyorunhealthy.Itis80%
saturatedfat,whichonthesurfaceseemslikeabadthing.Proponentsofcoconutoil,however,
arguethatthosefatsaremediumchaintriglycerides,whicharedigestedandabsorbeddifferently
fromlongchaintriglycerides.Infact,mostofthefatinhumanbreastmilkismediumchain

triglycerides.Itiscertainlytruethatvirgincoconutoilisfarlessprocessedthanmanybutter
replacements,andisthereforemuchmorelikelytobechosenbythosefollowingavegan,paleo,
orcleandiet.NOWbrand,inparticular,usescoconutmeatthathasbeendriedat7080
degreesandisthereforealsosuitableforthosefollowingarawdiet.
Overall,coconutoilisnotaperfectsubstituteforbuttertheflavorisdifferent(although
pleasantinitsownright),andthemeltingpointisjustdifferentenoughtocausesomeconcern.
However,itisbyfarthemostnatural,unprocessedbuttersubstituteavailable,andthataloneis
enoughtomakeitavaluableingredientinahealthconsciousbakeshop.
