Potassium sorbate granular is a white, rod-shaped pellet used as a food preservative with the chemical name 2,4-Hexadienoic acid, Potassium Salt and molecular formula of CH3-CH=CH-CH=-COOK. It has a solubility of 1g in 1ml of water and specifications require it to be a white granular substance between 98-101% assay with limits on alkalinity, acidity, aldehyde, lead, mercury, heavy metals, arsenic and loss on drying.
