CHICKEN CURRY & RICE
Ingredients:
Chicken breast onion Red or yellow pepper Garlic Mushrooms (optional) Curry paste Portion of rice Peas or sweet corn (optional) Small piece of potato
Equipment:
small saucepan sharp knife chopping board med saucepan wooden spoon green bowl serving plate
Method:
1. First prepare the vegetables, chop the onion finely and the mushrooms and peppers slightly chunky. 2. On the other end of the chopping board chop the chicken up. 3. In the med saucepan put some water in for the rice. Heat it up to boil. Put the rice in a sieve and wash the starch off of it. Put it in the pan of water. 4. Heat some oil up in the small saucepan and add the onion, cook for a minute. Next add the pepper, potato and mushroom. Add a good tablespoon of curry paste and cook. 5. When rice is boiling turn the heat down and keep the lid on and let it steam cook. Add the chicken to the onions and cook until totally white. 6. Next add the vegetables and garlic and add some water or stock. Bring up the heat. Cook for 15 minutes or so. 7. Strain the rice off and arrange on the plate, place the chicken either on top or to one side.
