I Srijon Moitra pursuing Hospitality Management from International Institute of hotel


management would like to share my WORK EXPERIENCE in this report regarding my 22
weeks of industrial training from HYATT REGENCY KOLKATA and also from HOTEL
INDISMART SALTLAKE where I acquired vast knowledge about different departments of the
hotel and improved upon my practical skill and also it has helped me to get a lot of
confidence.

HOTEL HYATT REGENCY is a 5 star deluxe commercial property situated at JA-1, sector-3
saltlake Kolkata-700088.

My training began on 9th November 2014 and on the first day of my internship programme I
was feeling proud to be selected as an intern in one of the best brands of Kolkata.

Our introduction was taken by Miss Subarna Chatterjee who is the Training manager of
Hyatt Regency Kolkata. We were asked to introduce ourselves following a brief History of
HYATT. We were given our identity card and Name tag and were then taken for a property
visit.

We got to work in all the departments of the hotel, but Food and Beverage service and Food
Production caught my interest and in future I would like to go ahead with either of these
two departments.

30, 2013, the company's worldwide portfolio consisted of 535 properties.

 Park Hyatt- Park Hyatt is Hyatt's luxury brand. Park Hyatt hotels are mid-sized
properties located only in premier destinations and cater to affluent
individuals.
 Andaz- Andaz hotels are upscale, boutique-inspired lifestyle properties.
 Grand Hyatt- Grand Hyatt hotels are large-scale hotels that provide upscale
accommodations in major cities.
 Hyatt Hotels- Hyatt hotels are upscale, full-service hotels that have between
200-600 rooms. This brand competes with mid-sized, full- service hotels and
independent boutique hotels in major cities.
 Hyatt Regency- Hyatt Regency hotels are aimed at convention and business
travellers as well as leisure travellers and are located in urban, suburban,
airport, convention and resort destinations around the world.
 Hyatt Place- Hyatt Place hotels are mid-sized properties designed for families
and business travellers; they are located in urban, airport and suburban
areas.
 Hyatt House- HYATT house (formerly known as Hyatt Summerfield Suites and
Hotel Sierra) properties are extended stay, residential- style hotels and
smaller-to-mid-sized upscale properties with modern style located in urban
and suburban locations across the United States.

WATERSIDE CAFÉ is an all-day dining restaurant open for 24 hours. Situated at ground level
with 144 covers. Option of A la Carte & Buffet available. Buffet for Breakfast - 6.30 a.m. to
10.30 a.m. on weekends which extends till 11.00 a.m. in public holidays. Lunch & Dinner
buffets are available from 12.00 p.m. to 3 p.m. & 7 p.m. to 11 p.m. respectively.

GUCHHI is an Indian restaurant serving tandoor, kadhai & Bengali specialities. Located at

for lunch on Saturdays & Sundays from 12.00 p.m. to 3.00 p.m. & for dinner from 7.00 p.m.
to 11.00 p.m. It is a North West Frontier Cuisine.

DEPARTMENTS WORKED IN-

FOOD PRODUCTION- In food production I worked in various kitchens like-

1. Commissary- Commissary is a kitchen from where raw vegetables, meat, fish,


fruits & dairy products are supplied to other kitchens. My task here was to
peel sweet lime for making sweet lime juice, do different cuts of vegetables
as Chef’s asked me to do. I got the chance to work in butchery. I learned
many things here.
2. Bakery- Bakery had two sections. Bread section & pastry section. Bread
section dealt with all the different kinds of breads, whereas pastry section
deals with gourmet items like cakes, pastries, etc. my task here was to look
after the desert counter of Waterside Café.
3. Banquet- banquet kitchen has two sections, Indian & continental. Banquet
also prepares food for employee café ‘Santusti’. My task here was to prepare
titbit items as per Chef’s guidance.
4. Waterside café kitchen- It has three sections. Continental, Indian & Pantry.
Pantry kitchen looks after all the cold food items like salads, cold cuts, juices.
Also looks after Regency Club’s buffet spreads. My task here was to cut fruits
for buffet & for making fresh fruit juices, and all other works for buffet
setups.

FOOD & BEVERAGE SERVICE- outlets worked in are-

1. Café.
2. Room service (IRD).
3. La cucina.
4. Guchhi.
5. The Bar.
6. Banquet.
My task throughout service was almost the same, i.e. table clearance, serving guest,
back area works (wiping of cutleries, crockeries & glassware), and different table
setups (breakfast, lunch & dinner)

HOUSEKEEPING- I worked in rooms division only. My works included making beds,


making bathroom, vacuuming rooms as well as corridors, dusting & mopping &
placing of room amenities. I worked in mini bar, where I did inventory.

CONCLUSION

During my course of my training I learnt to take pressure but still to stay calm &
handle situation and not to panic. I gained confidence. At starting it was a bit tough
but I learnt to adapt to different situations. Time -management was very much
crucial as I had to report different outlets at different times. The Industry Is all about
Hard Work, Smart Thinking & Optimum utilization Of Resources. I have enjoyed all
my departments as the seniors gave me a great help and support. I would Rate my
training exposure as a very fruitful experience of my life as I grasped all the
knowledge I could possibly attain in this 22 weeks of internship training.
