EXPERIMENT# 08
Experiment Title: Milk analysis
Objectives: Determine the percentage of acidity in milk by titrating a known volume of milk sample
against a standard solution of sodium hydroxide.
Apparatus required: Titration flask, beaker, burette, pipette, and burner.
Chemicals required: N/10 NaOH solution,1% solution of phenolphthalein, milk.
Procedure:
Take 10 ml of milk sample in the titration flask. Add 40 ml of freshly boiled and cool
water in it. Add 0.5 ml of 1% solution of phenolphthalein in the titration flask. Take N/10 NaOH solution
in the burette. Titrate the milk sample against the N/10 NaOH solution. Note down the initial burette
reading and the final burette reading when the end point , a distinct pink colour is achieved. Calculate the
percentage of acidity in milk sample as below.
Observations and Calculations:
1. Normality of standard solution of NaOH = 0.1N
2. Volume of milk sample taken = 10 ml
3. Indicator = 1% solution of phenolphthalein
4. Initial colour of solution = milky white
5. End point colour of the solution = pink Colour
Reactions:
CaHPO4 + 2NaOH → Ca(OH)2 + Na2HPO4
Na2HPO4 + NaOH → Na3PO4 + H2O
CH3CH(OH)COOH + NaOH → CH3CH(OH)COONa + H2O
