Beginning cooks may find the tools in baking a bit complex. Indeed, the tools required for a professional
patisserie are quite specialized. A well – rounded chef need not be concerned with possessing every
gadget available, but should recognize and be familiar with its usage. This hand tools and equipment will
make the task easier, most of it can be improvised by a creative chef. When purchasing tools and
equipment for baking look for quality and durability.
1. Stand Mixer – used in beating egg whites in large quantity. Also used in making cookies and
bread dough. Ideal to use in making frostings.

3. Electric Hand Mixer – used in mixing cake batters/mixture. This can also be used in beating egg
whites but in small quantities only.
4. Oven – a thermally insulated chamber used for the heating, baking, or drying of a substance,
and most commonly used for cooking.
There are 2 types of oven the Convection oven and Conventional oven. The difference between
them is that the source of heat in a conventional oven is stationary and rises up from the
bottom. While the heat from a convection oven is blown by fans, so the air circulates evenly
inside the oven.

7. Stainless Spatula / Frosting Spatula - A frosting spatula or palette knife is a kitchen utensil
designed especially for the use of spreading a substance onto a flat surface, such as frosting on
a cake. It is also an ideal tool for applying spreads onto sandwiches in mass quantities.

10. Measuring Cup – used to measure Liquid and Dry ingredients in baking that requires bigger
quantity.
11. Dough Cutter – a stainless metal or sometimes made of plastic and wood. This is used to cut
dough into desirable size.

12. Baking Tins – this is used to mold cake batters. Comes in different sizes and shapes.
14. Rolling Pin – use to flatten out dough. Some rolling pins comes with embossed design used in
fondant called decorative rolling pins.
15. Proofing Rack – A dough proofer is a warming chamber used in baking that encourages
fermentation of dough by yeast through warm temperatures and controlled humidity. It is also
called a proofing box, proofing oven or proofing cabinet.

16. Cake Turntable - A turntable, or revolving cake stand, is a revolving stand with a flat working
surface for decorating cakes and other pastry. It is also used in building cakes.
17. Icing Comb - An Icing Comb is a large format cake decorating comb for creating lines and
patterns on cakes, pastries and other foods. Icing Combs typically come in triangle or rectangle
shapes with one flat edge, while the other edges have designs to create lines and patterns in
frosting.
18. Piping bags / Pastry bag - is an often cone- or triangular-shaped bag made from cloth, paper, or
plastic that is squeezed by hand to pipe semi-solid foods by pressing them through a narrow
opening at one end often fitted with a shaped nozzle, for many purposes including in particular
cake .

19. Piping Tips - Commonly referred to as a decorating tip or frosting tip, this is the nozzle that
attaches to the end of the pastry bag. Piping tips come in a variety of sizes and shapes for
different decorating purposes.
20. Flower Nails - It's a handy metal tool used to create the gorgeous buttercream flowers that
decorate your favorite cakes.
21. Cooling Rack – A cooling rack (also known simply as a wire rack) is used to allow air to circulate
freely to cool baked goods, and to prevent them getting soggy from condensation. A tight grid is
typically the best format for a cooling rack, to prevent thin baked goods from breaking or falling
through.
