ABSTRACT

In this study, it focuses the effectiveness of Apple Cider Vinegar and how does it

alleviate such ailments. People nowadays are finding alternative ways that comes from natural

to alleviate their ailments. Little did they know, a simple kitchen component can be a remedy

for alleviating ailments. Many researchers already spreading up the good news and produce

their own claims that testify the good quality of Apple Cider Vinegar. Moreover, Apple Cider

Vinegar has the wide variety of health benefits because it contains nutrients that make it

effective. As a matter of fact, it can help those people who cannot afford to pay expensive

treatment to cure their sickness since it’s affordable and consumable. With this intention,

the researchers would like to call the attention of the society that might be overlooked the

significance in using apple cider vinegar. The researchers conducted a survey and

observations to evaluate whether it is effective or not. This research provides valuable

information regarding the effectiveness of apple cider vinegar as medicinal uses and alternative

therapy.

Chapter 1

THE PROBLEM AND ITS SCOPE

Introduction

Khakpour (2010) explained that an apple a day keeps the doctor away and so does a

daily dose of apple cider vinegar. Apple cider vinegar is a type of vinegar made from apples

and has a characteristic amber color. Over the centuries, apple cider vinegar has been used for

many purposes: making pickles, killing weeds, cleaning coffee makers, polishing armor, and

dressing salads. Apple cider vinegar is also one of the most popular go-to ingredients in your

kitchen and offering many natural health benefits.

Mercola (2009) states that there have been many lofty claims about the miraculous

healing powers of apple cider vinegar, and many people do seem to be experiencing some

health benefits. There has been surprisingly little research about using vinegar for therapeutic

health purposes, given the large number of dramatic claims about it.

Since the apple cider vinegar's (ACV) core ingredients are apples, it also contains the

minerals and nutrients that an apple contain. ACV is healthy vinegar for it contains potent

vitamins and minerals that are good for the health like pectin, Vitamin C, Vitamins B1, B2 and

B6, biotin, folic acid, niacin, pantothenic acid, and small amounts of minerals like potassium,

sodium, phosphorus, calcium, and iron. ACV contains over 90 ingredients and aside from that,

it contains beneficial elements that work together to make it as the "mother of vinegar". The

main component of ACV is acetic acid which is also known as ethanoic acid which is a

colorless liquid that has a pungent smell and sour taste.

Furthermore, those who commend apple cider vinegar’s wide-ranging benefits say its

healing power comes from the abundance of nutrients that remain, even after the apples are

fermented. One possible explanation for apple cider vinegar’s health benefits is its high

concentrations of acetic acid. Like other acids, acetic acid can increase your body’s absorption

of important minerals from the foods you eat, such as green leafy vegetables.

Apple cider vinegar can be used as medicinal remedy because it reduces bloating.

Vinegar increases the acidity in the stomach, which allows it to digest the food you've eaten

and helps propel it into the small intestine. According to Raphael Kellman (2017), MD, founder

of the Kellman Center for Integrative and Functional Medicine in New York City, because

slow digestion can cause acid reflux, a burning sensation that occurs when food in your

stomach backs up all the way into your esophagus and triggers feelings of fullness, consuming

vinegar to move things along can stop you from feeling like the Pillsbury Dough Boy.

On the other hand, apple cider vinegar is also an alternative therapy in dissolving

kidney stones. Olejarczyk explained that some home remedy enthusiasts swear by the use of

apple cider vinegar to treat kidney stones. The theory behind it is that apple cider vinegar is

made of citric acid that which could play a role in dissolving kidney stones, helping the body

pass the stones more easily. In addition, it is believed that apple cider vinegar helps in the

prevention of kidney stones to begin with by alkalizing the effect on blood and urine and

promoting the production of hydrochloric acid in the body to prevent the formation of kidney

stones.

Lastly, the purpose of this study is to know the effects of apple cider vinegar in treating

flu, bloating, stomach pain, high blood pressure, sinus infections, dissolving kidney stones,

and alkalizing your body.

Objectives of the Study

1. Describe the correlation of age, gender, and ailments of the respondents.

2. Determine the self-assessment of respondents towards apple cider vinegar.

3. Determine the satisfaction of the respondents on how effective apple cider vinegar is

in alleviating their ailments.

Hypothesis

To determine if it helped the respondents in reducing their illness after taking apple

cider vinegar.

There is no significant result in the respondents after their intake.

Scope and Delimitations of the study

This study focuses on the apple cider vinegar as medicinal uses and alternative therapy

for flu, bloating, stomach pain, high blood pressure, sinus infections, and alkalize your body.

This study does not cover other sickness, such as dissolving kidney stones, heart burn,

chest colds, arthritis, low cholesterol, etc. due to lack of time and difficulty in finding such

subject.

Significance of the Study

This research study will give information to the society to use apple cider vinegar as a

medicine and an alternative therapy. Adult, teen, and even a child can use this for their health

problem, especially those who had a budget problem in buying such expensive medicines for

a long period of treatment. Basis in knowing that there are improvements in using apple cider

in a short period of time, it helps improve health for people who has weak bones (osteoporosis),

leg cramps and pain, upset stomach, sore throats, sinus problems, high blood pressure, rid the

body of toxins, stimulate thinking, dissolves kidney stones, and fight infection.

Definition of Terms

This glossary is intended to assist you in understanding commonly used terms

and concepts when reading, interpreting, and evaluating scholarly research.

Acetic Acid. -- A weak strength and sharp flavored acid, which is the main component of

vinegar.

Acid reflux. -- A condition in which the content of the stomach containing gastric acid flows

back into the esophagus.

Citric Acid. -- A weak organic tricarboxylic acid, which occurs in the metabolism of all aerobic

organisms.

Mother of Vinegar. -- Substance composed of a form of cellulose and acetic acid bacteria that

develops on fermenting alcoholic liquids, which turns alcohol into acetic acid with the help of

oxygen from the air. It is added to wine, cider, or other alcoholic liquids to produce vinegar.

Phosphoric Acid. -- Is a mineral acid.

Postprandial Glycaemia. -- Which is a crucial in the management of diabetes.

REVIEW OF RELATED LITERATURE AND STUDIES

This chapter presents the wealth of literature and studies, gathered from books, journals

and internet, in connection to the present study. It is organized in the following manner. First,

different foreign studies and literature of vinegar and lastly, the local studies and literature.

Foreign Studies and Literature of ACV

Vinegar History

Vinegar is the world's oldest cooking ingredient and food preservation method.

According to the Vinegar Institute (Vinegar Institute 2005), vinegar's use can be traced back

over 10,000 years. In fact, flavored vinegars have been manufactured and sold for almost 5,000

years. The wide variety of vinegars available today is nothing new. Until the six century BC,

the Babylonians were making and selling vinegars flavored with fruit, honey, malt, etc. to

gourmets of the time. In addition, the Old Testament and Hippocrates recorded the use of

vinegar for medicinal purposes (Kehrer 1921; Conner 1976)

Components and uses

Acetic acid is the predominant flavoring and antimicrobial component in vinegar. The

following review will focus on the importance of acetic acid as a direct food additive or more

recently as a food processing aid, to decontaminate food prior to distribution and consumption

(Marshall et. al2000).

Apple cider vinegar has a wide variety of health benefits. The bioactive compounds

and acetic acid in apple cider vinegar and other vinegar varieties contribute to the health

benefits of vinegar. According to Fahey (2017), bioactive compounds are “extra-nutritional

constituents that typically are naturally occurring in small quantities in plant products and lipid-

rich foods. Epidemiological research has increased in the area of bioactive compounds because

of their beneficial effect on chronic disease treatment and prevention. A diet rich in bioactive

compounds, including flavonoids, anthocyanin, and others, has been shown to have significant

health benefits.

Acetic acid bacteria are well known for their ability to spoil wines because they can

produce large amounts of acetic acid from ethanol and other compounds present in wines

(Joyeux et al1984; Drysdale et al1984).

The antiglycemic effect of vinegar was first reported by Ebihara and Nakajimain 1988.

In rats, the blood glucose response to a 10% corn starch load was significantly reduced when

Coad ministered with a 2% acetic acid solution. In healthy human subjects, although the

glucose response curve was not significantly altered, the area under the insulin response curve

following the ingestion of 50 g sucrose was reduced 20% when Coad ministered with 60 mL

strawberry vinegar. Several years later, demonstrated in norm glycemic subjects that 20 mL

white vinegar (5% acetic acid) as a salad dressing ingredient reduced the glycemic response to

a mixed meal (lettuce salad and white bread containing 50 g carbohydrate) by over 30% (P <

.05).

Fitschen (2017) states that apple cider vinegar can be considered as a miracle

food/drink for it can cure different sickness. Vinegar can be made from nearly any fermentable

carbohydrate source, including apples. To make vinegar, yeast ferment sugars into alcohol

which is then converted into acetic acid by bacteria. The final acetic acid concentration of

commercially available vinegar is 4-7 percent. From weight loss to cancer to detoxification

and many other claimed uses, it can seem like all you need to do is take some apple cider

vinegar and all of your problems will be solved.

Local Studies and Literature of ACV

Apple Cider Vinegar in specific has been used as a traditional home remedy for a

number of years. One of the common ailments that ACV can alleviate are stomach acid.

Stomach acid is a digestive fluid formed in the stomach and is composed of hydrochloric acid,

potassium chloride and sodium chloride. Stomach acid is useful for the digestion of food,

mainly the digestion of proteins. Stomach acid can be imbalance when digesting. Most

common symptoms of stomach acid are stomach pain, acid reflux and bloating, heartburn,

indigestion, fungal infection, diarrhea, nausea and food allergies etc. In Phil.D.C Jarvis, M.D

(1958) published his book folk medicine: A Vermont Doctor's Guide to Good Health and wide-

spread medicinal use of apple cider vinegar took off. Jarvis recommended Apple Cider Vinegar

as a cure-all, explaining that it was unusually rich in potassium. Since then, apple cider vinegar

proponents have touted apple cider vinegar as a natural alternative to modern medicine for

stomach acid.

In our society, apple cider vinegar is very popular as an alternative medicine since it is

proven and tested in all over the world for how many centuries passed. Since vinegar is one of

the powerful natural medicine, Filipinos also tried apple cider vinegar to see the result if it is

really effective to treat sickness.

Moreover, apple cider vinegar in the Philippines are still continue to spread up until

now because many experts and doctors highly suggest to drink apple cider vinegar. According

to Carmona (2014) suggested a colonic to further cleanse and get rid the toxic matters in the

system.

Chapter 3

MATERIALS AND METHODS

This chapter presents the research method. It focuses the method used in conducting

this research which covers research setting, research design, respondents and sampling

procedure, research instruments, and data gathering procedure,.

Research Setting

The study will be conducted in Northern Mindanao specifically in Cagayan de Oro, on

those who uses apple cider vinegar as a medicine and an alternative therapy for flu, bloating,

stomach pain, high blood pressure, sinus infections, dissolving kidney stones, and alkalize your

body.

Research Design

In this study, both experimental and descriptive method are used in conducting the

research study. Ary et al (2006: 325) states that “Experimental research design enable

researcher to estimate the effect of an experimental treatment”. While, descriptive method is

closely associated with observational, data collection method, as well as, surveys can also be

specified as popular data collection methods used in descriptive studies. As a researcher needs

know the effect and observations on respondents who uses apple cider vinegar as a medicinal

use and alternative therapy for flu, bloating, stomach pain, high blood pressure, sinus

infections, diabetes, and alkalizing the body.

Respondents and Sampling Procedure

The study will have respondents that are randomly chosen from some of the residents

of Cagayan de Oro which consist majority of women with the age of 18-55 years old who uses

and willingly to continue to use the apple cider vinegar as a medicinal value and for alternative

therapy especially for our respondents who have flu, bloating, stomach pain, high blood

pressure, sinus infections, and diabetic problem.

Research Instruments

There are five ways of collecting data; observation, test, questionnaire, interview, and

document. In this study, the researchers used interview, questionnaire, and documents as

instrument. Therefore, we applied set of questions and data regarding the results of the

observation and daily treatment of the respondent. One full water in a glass and two tablespoon

of apple cider vinegar in their intake. The questionnaire is a researchers-made questionnaire,

with the reliability result of 0.7554 (Passed).

Data Gathering Procedure

1. The researcher will find respondents who are already taking Apple Cider Vinegar.

2. Respondents will be asked about the effects or improvements after they’re taking Apple

Cider Vinegar.

Steps in Gathering Data:

1. The researcher will asked permission to gather data such as survey questioners from

the chosen respondents as identified for the study.

2. When the approval was granted, the researchers will asked about the daily observation

and effects of the respondents.

3. The respondents will be given a period of time to answer the questions and retrieve it.

4. Once retrieved, calculations of data about the effectiveness of apple cider vinegar will

be done.

PRESENTATION, ANALYSIS, AND INTERPRETATION OF DATA

This chapter presents the findings, analysis, and interpretation of data gathered

from the results of survey whose objective is to found out the effects of Apple Cider Vinegar.

In order to evaluate the respondents’ information, table 1 shows the association

between age, gender, and ailments. The data the researchers had gathered shows the majority

of the respondents who takes apple cider vinegar for their ailments. Respondents were asked

to put their age for the age category, all participants responded to the question (100%). 36.36%

of the respondents were in the 41 years old and above age category and fourteen of the twenty-

two respondents (63.64%) were below the age of forty-one years old. Majority of the result is

an adult because as one grows older, the immune system becomes slower at detecting cell

defects. Having seventeen females (77.27%) and five males (22.73%) as respondents who

already taken the apple cider vinegar. Among the twenty-two respondents five of them is

having flu as their common ailments.

In this table, it shows the self-assessment of each respondent. How much they know

about apple cider, are they aware about it. Twenty-one (95.45%) out of twenty-two respondent

knows about what is apple cider vinegar and all of them (100%) claims that it lowers their

ailments.

SUMMARY, CONCLUSIONS AND RECOMMENDATION

Summary

Alleviating sickness such as flu, bloating, stomach pain, high blood pressure, sinus

infection, and alkalizing your body using Apple Cider Vinegar. This report determines the

effectiveness of the ACV and how the ACV does help the respondents according to their

sickness. The object of this report is intended to provide a holistic medicine in helping alleviate

sickness with background information about the respondents in assessing the feasibility to heal

their sickness. ACV can help to alleviate sickness because it contain Vitamin C, B1, B2, and

B6, Biotin, Folic Acid, Niacin, Pantothic acid, and small amount of minerals like Potassium,

Sodium, Phosphorus, Calcium, and Iron. Evaluation and Observation is the way to identify

whether the ACV is effective. Observing and asking the respondents who are already drinking

ACV to strengthen the claim and a set of questions and data regarding the result of the

observation from their daily treatment. A medical evaluation suggests that establish a proper

medication according to the sickness and observation can help the claim strengthens not only

in the field of medicine but also can convince the reader to try the Apple Cider Vinegar for

alleviating their sickness.

Based on the results, respondents claimed that apple cider vinegar helped them in

alleviating their ailments such as flu, bloating, high blood, sinus infections, stomach pain, and

improving health status such as alkalizing their body.

Recommendation

Throughout the years, Apple Cider Vinegar has been a part of the history and up until

the present. It shows that a simple component can alleviate such ailments and can be used as

alternative medicine. Apple cider vinegar can be useful especially to those people who cannot

afford to pay an expensive treatment. Researchers already spreading the good news about the

miracle drink to help the unfortunate one to be cured. Based on the result, some respondents

answered randomly about the effectiveness of the apple cider vinegar and the aftereffect shows

the satisfaction result from the respondents. The future researchers can improve and discover

about the apple cider vinegar and focusing on alleviating sickness, reducing pain and formulate

a right dosage in taking Apple cider vinegar. The high percentage according to the mixed

results regarding the age, gender, and ailments is that a person age 41 years and above has the

highest risk of ailments in the result. To avoid such ailments we suggest to make Apple cider

vinegar as an alternative medicine which maybe a big help to the community. The survey

results suggest that: (1) introduce and promote apple cider vinegar to the society and spread

the benefits in using Apple cider vinegar (2) doctors should recommend Apple cider vinegar

to all the patients and to be as food supplement (3) should consider it as medicinal uses and

alternative therapy and to be approve to all health organization as an effective and curable

medicine (4) establish a proper medication according to the sickness to be more effective (5)

research further to strengthen the claim to be proven and trusted. Establishing the validity and

credibility of this claim will have a big impact to the society as well as in the field of medicine

who is still discovering to help prevent sickness.
