Extra Dry, Liboll, San Marzano, Puglia Italy, NV
Pink color with a very nice soft mousse in the glass. On the nose, impressions of orange blossom,
pink grapefruit and some pomegranate. The taste is a nice fresh start with many fruit tones of
strawberry and raspberry. Crisp notes of grapefruit and lime in the mouth.
The aftertaste is long and refreshing with recurring red fruit.

The Roots Run Deep Educated Guess Chardonnay 2013 is an ultra-friendly Chardonnay that is full
of bright fruit and subtle oak flavor. Tropical fruit aromas and flavors abound, conjuring images of
warm climates and delicious food. The fruit flavors are balanced by a creamy mouthfeel, toasty oak,
spice, and notes of vanilla. These warm tones are perfectly subtle and make this Chardonnay a crowd
pleaser.

The nose has volume with aromas of lemon curd and apricot. On the palate, ripe citrus fruit, melon

and aromatic on the palate. The structure is well balanced with silky tannins with a very long and
fresh finish.

Lush with notes of black cherry, dark berries and plum with a hint of
dried herbs. This wine is silky and voluptuous with soft tannins and finishes with a touch of cocoa

The immediate impression on the nose is the mildness of the pure, airy, bright bouquet. A floral, fruity
pastel tone then unfolds and quickly darkens into candied fruit, ripe hay and toasted notes, along
with hints of licorice. The wine’s opulence – contained and succulent, round at heart – reveals itself
on the palate. The envelope slides and stretches, and the wine becomes more complex and edgy,
silkier than it is creamy. The whole eventually melts into an exquisite bitterness tinged with the briny
taste of the sea.

Like an orchard in late spring, this blends floral and fruit notes of ripe apple, white cherry and apricot.

lemon, orange peel and apricot. Lots of saline and minerals on a crisp, long finish with pure citrus
fruit.

Bright yellow color. At first the nose reveals notes of citrus and fresh bread, this biscuity character then gives
way to aromas of flowers and yellow fruits (hints of apricot, peach and quince). On the palate, a bewitching
flavor of ripe hazelnuts envelopes honeysuckle; this is quickly followed by the delicate notes of crystallized
mandarin and orange peel.

This Cava presents a fine pale yellow color with bubbles that form a persistent crown.
It is fresh, with scents of white fruits like apples and pears on a bed of citric rind and
white flowers. The aging process gives it a mildly sliced bouquet with notes of cinnamon
and baked biscuits. It is a structured sparkling wine, with a well-balanced acidity from
beginning to finish. The bubbles bring it a certain creaminess and volume to the wine,
extending its aromas outward. Its balanced finish harmonizes that acidity with a slight hint
of sugar on the tongue.

Pale yellow, with small and constant bubbles. It boasts a complex and intense aroma of mature white
fruit, citrus and stone fruits combined with exotic and waxy floral notes (bergamot, chamomile). The
palate is soft but elegant, pleasantly yellow and citrus fruits, white flowers and fresh nutty notes.
Super clean and refreshing.

Copper color with golden highlights with fine and persistent bubbles. Aromatic complexity,
with notes of red fruits, flowers, nuts and spices. Soft and fresh on the palate. An
enveloping creaminess appears with great persistence.

Bright grape and green apple aromas, crisp and refreshing, yet a nice ripe fruit richness
that makes this amazingly easy to drink.

Look for cherries, strawberries, peaches and subtle hints of minerals on the nose. Light in body, with notes
of ripe red berries and stony fruit. A perfect, medium-plus acid structure that balances well with the ripeness
of the fruit on the palate - carrying the wine throughout and culminating in a refreshing finish.

with notes of Turkish delight. A hint of spritz on the palate and balanced sweetness
makes it simply delicious.

Golden hay with a hint of fresh green. Displaying ripe pineapple, poached apple, fresh
cream aromas, toasted hazelnuts. As the wine opens up, hints of vanilla bean, wet
pebble, stone fruit and buttered popcorn emanate beautifully. The palate is smothered
with ripe flavors of Fuji apple, dried mango, fresh cashew, lemon peel, raw macadamia
and nectarine notes.

Central Valley, 2017
Pale yellow color with glints of green, very characteristic of the variety. Aromas of melon, green apple,
pineapple, and lime are underscored by spicy, herby notes such as lemongrass and lemon verbena.
On the palate, this wine reveals great volume and structure.

Beautiful bright yellow with pale green highlights. Light notes of pink grapefruit and almond
blossom. Ageing on the lees gives the wine richness and body, that are accompanied by freshness
and finesse through to the particularly long finish.

Light golden colour. Expressive nose of citrus, orange, fresh almond. Nose on stones. Very elegant
citrus notes. On the palate, full attack of citrus fruit, mineral and develops aromas of gunflint. Vivid,
dry, aromatic, not overly structured yet persistent.

Pale lemon colour, a vibrant nose with hints of matchstick character and petrol add breadth to the
white peach and citrus confit scented nose. Notes of orange oil, white flowers, Anjou pear, mint and
nutmeg. Medium to full-bodied, satiny and layered, it’s bright and lively, with fine concentration, tangy
acids and a nicely defined finish.

Rhone, 2018
Pale green-hued yellow, this wine is highly complex with a mineral accented nose evoking ripe citrus
and orchard fruits. Sappy and impressively focused on the palate, it offers intense citrusy, zesty,
fresh pears and honeysuckle characters that open up and deepen after a few minutes. Some ginger
emerges on the intense long finish with some serious persistence.

The colour is clear golden yellow with green reflections, of good intensity. The nose is open, pleasant
and intense. There is a dominance of floral scents, rose, peony, exotic fruits, grapefruit, lychee and
mango. Airing enhances the previous aromas and reveals spices, candied ginger and peppermint.
The mouthfeel is dense, fleshy and tender. The full-bodied wine evolves with an open and vigorous
liveliness marked by a sparkling note. The balance of this wine is rich and soft. The grape is expressed
very beautifully.

POUILLY FUMÉ (SAUVIGNON BLANC), La Moynerie, 3,800


Michelle Redde et Fils, AOC, Saint Andelian, 2019
Fresh aromas of green apple, lime and wet stone on the nose, along with hints of gooseberry and
an almost smoky flintiness. These aromas continue on the palate, with the acidity typical of the area
balanced by the freshness of the apple and lime.

PINOT GRIS, Les Petits Grains, Domaine Mittnacht Freres, Vin D’Alsace, 3,250
Apellation Alsace Controlee, 2020
This white wine from Alsace (France) is pale golden yellow in color. The nose is fine and complex with
nuances of fresh fruits such as pear, roasted hazelnuts and a smoked character. This wine has a silky
attack: an off-dry Pinot Gris built with an elegant acidity. Fine fruity flavors with dried fruits notes. A
still young wine - time will allow it to reveal more.

A delicious, traditional classic Sancerre–intense, zesty, pure and linear, refreshing citrus rind
character. Limes, lemons and minerals with a peachy ripeness, remarkably intense and concentrated
for a regular Sancerre.

GERMANY
GRAUBURGUNDER, Bercher, 2016 2,400
Fine, spicy freshness, aromas of ripe, yellow fruits with herbaceous notes such as nettles, and walnut.
It has a subtle fruitiness including a light flavour of cassis. This dry white wine has an excellent
minerality.

ITALY

MUSCAT & ALBANELLO, SP68 Bianco, Occhipinti, Terre Siciliane IGT, 2021 3,200
A brillianty aromatic wine with notes of white flowers, pink grapefruit, lychees, herbs and spices which
is wonderfully light on the palate. The lees ageing gives it a bit of tannic grip and a slightly olive like
savouriness at the finish.

PINOT GRIGIO, Cantina Riff Progetto Lageder, 2018 1,900


Brilliant straw-yellow color with a green tint. Fine fruity with notes of apples and peaches. On the
palate the wine is pronounced clean and elegant. Light to medium-bodied with a fresh mouth-
watering finish. Dry and crisp.

SAUVIGNON BLANC, Bastianich, DOC, Friuli, Colli Orientali, 2012 2,500


Straw yellow, nose expresses notes of grapefruit, spinach, fresh flowers, under a distinctive plant
aromatic framework. Mouthfeel is dry, full and enveloping. Fresh, elegant, good drink, closes with a
nice refreshing note of great persistence.

fruit flavours, pleasing weight and long, dry finish.

Forty Barrels, Bot River, 2021
A delicious, cooler climate Chenin Blanc fermented in concrete and stainless steel tanks. Dry, fresh
and delicious. Green melon, apple, and delicate apricot blossom aromas on the nose. The palate has
fresh green apple, pineapple flavors with a hint of wood spice.

SPAIN
GODELLO, Bierzo Blanco, Polvorete, Bodegas Emilio Moro, 2,500
D.O. Bierzo, Castilla y Leon, 2021
Straw yellow in color with expressive aromas of white flowers and ripe fruit. On the palate it is fresh,
lively and expressive. A wine with marked acidity, a light and bright mid-palate and a persistent finish.

U.S.A.
SAUVIGNON BLANC, Ferrari-Carano, Fumé Blanc, Sonoma County, 2020 2,500
This wine has delicious aromas and flavors of grapefruit, lemongrass, lychee, pear, citrus, orange
blossom, peach and a touch of minerality. The Fumé Blanc has bright acidity and crisp freshness from
the cool, stainless steel tank fermentation, while the subtle oak character from neutral French oak
barrels adds body, complexity and depth.

Fresh, well-balanced, with gobs of dark fruit, great acidity, and mature tannins, unctuous and elegant.
In the mouth it is profound and round, fleshy, with soft but potent tannins.

MALBEC, Altocedro Old Vine Reserve, La Consulta Vineyards, Valley de Uco, 5,200

The palate is juicy, fresh and tasty, with almost unnoticeable tannins. Delicious ripe red-plum and
currant aromas lead to a palate that has a smooth array of ripe tannins that carry plum-paste and
black-tea flavors into the smooth finish.

MALBEC - CABERNET SAUVIGNON, Petit Caro, Domaines Barons de 3,900


Rothschild (Lafite) and Nicholas Catena, Mendoza, 2017
Deep ruby color. The nose is intense with notes of white flowers, red cherries and figs. The palate
is juicy and complex with hints of cloves and other spices. This well balanced wine is an elegant
expression of the blend of Malbec and Cabernet Sauvignon.

This Malbec is deep ruby in color, offering aromas of red fruits like ripe plums, cherries and
raspberries. On the palate it is fresh, juicy and slightly spicy, showing a unique balance between
acidity, gentle tannins and alcohol, followed by a long and delicate finish.

The 2018 is an intense red with violet reflections. Floral aromas with mineral notes. Elegant, bold
and with a medium to long finish in mouth. Aging in oak becomes unnoticed and perfectly balanced.

AUSTRALIA
CABERNET SAUVIGNON - MERLOT, Moss Wood, Ribbon Vale Vineyard, 6,100
Margaret River, West, 2011
A deep and complex nose combining rich red currant, tobacco, earth, tar and cedar; complex, with
great power. Full bodied, great concentration of red and dark fruit; complexity from tar and aniseed
notes. The tannins are ripe and firm but do not impinge on the texture, giving very smooth mouthfeel
and length.

GRENACHE, Yangarra Old Vine, Mclaren Vale, 2016 5,000


This wine continues the evolution of the Old Vines style but with a little more finesse on one hand,
and a little more boldness and authority on the other. The slightly bitter wild black cherry and the
more polite pickled Morello are even more to the fore. Check those fine, drawn-out, tapering
tannins with their savory hits of bay leaf and juniper. All these aspects combined in such forensic
proportions make it a wine that will grow, smooth and bloom if you can possibly put some away for
five or ten years.

SHIRAZ, Yangarra, PF, Mclaren Vale, 2021 3,900


A super-vibrant and refreshing wine that will keep your tastebuds and your wallet
happy. Spiced plums, cherries and cloves on the nose. The palate is juicy, supple
and moreish, with red and blue fruit singing, and very subtle tannins supporting the
chorus.

SHIRAZ, Yangarra “Kings Wood”, McLaren Vale, 2019 7,800


Incredibly vibrant deep purple colour in the glass. Medium to full-bodied. Subdued nose, dark loam
and black fruits lurk with intent. Spicy, curry leaf and black fruits, coffee and tobacco. Remarkable
poise for such a young wine, dark fruits, blood and ironstone all meld seamlessly. Full of palate yet
has a feeling of compression from acid and tannin so it pushes very deep and long.

SHIRAZ - CABERNET SAUVIGNON, Langmeil Steadfast, Barossa Valley, 2015 3,080


Medium depth crimson with purple hues. A rich and sweet aroma of red and blue berries jumps out
of the glass with hints of black olive, herbals and roasty notes adding some savoury to the sweet. Ripe
and juicy berries flow onto the palate which is medium bodied, with soft and velvety tannins adding a
lovely structure and texture to the wine while sweet and briary spice balances the juicy fruit through
to the finish.

The Grande Réserve is a benchmark for elegance and finesse in Chile. The wine is a blend of mainly
Cabernet Sauvignon and is characterized by the complexity and persistence of its bouquet of cherries
and blackcurrants (Cabernet Sauvignon), strawberries (Malbec), raspberries (Syrah) and plums, with
notes of bay leaves and black pepper (Carmenère). A delicious, exciting wine, with great density and
harmony.

CABERNET SAUVIGNON, Odfjell Orzada, Valle del Maipo, 2018 2,500


Complex on the nose, presenting rich, darker-fruit aromas with hints of plums, prunes, chocolate and
tobacco. Possesses a bold, brassy oak treatment, adding spice and toasty complexity. On the palate,
it is fresh with pleasant acidity and round tannins. From organically grown grapes.

CARMENERE, Cromas, Los Vascos Gran Reserva, Colchagua Valley, 2019 5,100

from the prestigious Kaviari Paris, an artisanal,
independent company who combine centuries-old
know-how from traditional sea-fishing craftsmen
with an eco-responsible approach to farming.

From the selection of eggs at the source, they


are refined by a Master of Caviar before they are
matured until the magical moment when the caviar
reveals its full aromas—buttery, iodized or nutty,

STEAK AGING AND PREPARATION

DRY AGING

Dry aging does for red meat what cave aging does to cheese, or cellaring does
for wine—improves the taste greatly with time.

Stored in our custom-designed dry aging coolers, our meat goes through
a unique process, incorporating an intricate and delicate balance of time,
temperature, air circulation and humidity.

Over time as the beef ages, moisture is drawn out concentrating the flavor in
every bite, while enzymes break down and tenderize the meat, bringing out
sophisticated notes such as hazelnut and blue cheese.

CHARCOAL OVEN
At Antonio’s, we believe that great products should be treated with equally
great cooking.

Our charcoal oven combines the best qualities of a charcoal grill and
convection oven. With temperatures of up to 450 °C , live charcoal, regulated
smoke and fire, it takes special technique and skills to control.

The charcoal lends a fantastic fire aroma and smoky flavor to the meat. The
fast and dry heat is excellent for ensuring that the moisture is retained and
helps to create that beautiful char and crust that we all look for in the perfect
steak.

Once served to your table, you will find that through these essential processes
you will be able to taste a steak with incredible flavour and juiciness, a unique
and unparalleled texture… there is simply no comparison.
