Each society has its own beliefs, attitudes, customs, behaviors and habits. These give people
a sense of who they are, how they are supposed to behave, and what they should or shouldn’t do.
People become conscious of such rules when they meet people from different cultures. For
example, the rules about when to eat vary from cultures. Many North Americans and Europeans
organize their timetables around three mealtimes a day. In other countries, on the other hand, it is

THE SOYBEAN
Once a wild ground-crawling plant, today’s soybean plant has been bred by Chinese farmers
for more than three thousand years to grow upright. The typical plant now stands about three feet
high and measures three feet wide.
For Asians who do not drink animal milk, the soybean quickly became indispensable. The
beans were known as the “cow of China” because they were soaked in water to yield a white liquid
now called soy milk. In 206 B.C, soybeans were first fermented to make douchi, the predecessor of
soy sauce.
Around the seventh century, miso emerged in Japan, evolving in part from a soybean paste
that Buddhist monks brought from China. Miso was made almost exclusively by monks, and
remained a delicacy of the privileged upper classes until the tenth century.
The earliest references of Western visitors to China and Japan rarely mentioned the
soybean. Instead, travelers referred to “gravy” (soy sauce), “great cakes like cheeses” (tofu), and
“milk out of the kidney beans” (soy milk). Samuel Bowen, an American adventurer, is credited
with having introduced the soybean to the United States in the mid-1700s. Over the next two
hundred years, soy products went from relative obscurity to the basis of a burgeoning industry.
The oil embargoes and resulting shortages of the 1970s created a need for an alternative oil
for making printers’ inks. Today, nearly one third of American newspapers use soy-based inks.
Researchers have also found applications for soybean oil as a clean-burning substitute for diesel
fuel in city buses and as a machine lubricant.
In the 1990s, researchers began experimenting with genetically modified soybean plants.
Some of the benefits of these “designer” plants are larger crop yields, higher-quality edible oil,
greater protein content, and resistance to diseases.
From its practical origins in ancient China, the soybean has journeyed far - a journey that
may, in fact, have only just begun.

Part II.
OK, class, now listen. The teachers have decided to take you on another trip to London. Yes
... now ... be quiet ... we’re going next Tuesday, that’s the ... 19th? ... yes, the 19 th September. We
know how you enjoyed our visit to the Science Museum last time so we are now taking you to look
at some dinosaurs ... how does this sound? Right, we’re going to the Natural History Museum. We
won’t travel by train this time but by coach. Make sure you’re at school at 9 ... we should be ready
to leave by 9:30. We’ll reach London around 12:30 and spend all afternoon in the museum. If we
leave London at about 6 o’clock, we’ll be back at the school by nine. At the museum we will have
a special guided tour and then there will be a talk about how the museum finds its exhibits and
about the work they do. The trip will cost you fifteen pounds each and you must give the money to
me by Monday morning at the latest.

Hi, Mum! Hi, Dad! Look at this leaflet! We’re having an Open Day at school. It’s going to be all
about the environment. I think it will be very interesting. There are all kinds of things happening.
It's on Saturday the twenty-fifth of October. Our Geography teacher, that’s Mr. Solomon, he’s
organising the whole thing really, though he’s getting lots of help of course. He was telling us all
about it this morning ...
and looking for volunteers. He’s going to show a documentary film about air pollution. And our
Science teacher, Miss Hopkins, she’s running a workshop, that means people have to do things and
talk, not just listen. She’s calling it: "How to recycle and why". We all have to bring in things you
can recycle, like cans, and newspapers and cardboard boxes. And she’s going to show what
actually happens to these during the recycling process. And they’ve invited Ted Hamilton, the
horticulturalist, to lead a walk around the area. It’s all about protecting our natural environment.
I’d say that will be very popular, and places are limited, so I’ve put our three names down for that.
I hope you want to go! Then in the evening there’s a special guest. What’s her name? Oh yes ...
Doctor Lynda Potter. She’s a well-known environmentalist. She’s going to give a talk about how
everyone can do something. Yes ... the title of her talk is: "What can WE do to help?". I think
that’s a good idea. People often think, "Oh, there’s nothing I can do". And our History teacher,
Mrs. O’Leary, she’s in charge of the information stand. There’ll be books and leaflets about the
environment. And she’s organising a team of environmental specialists who will be able to answer
people’s questions. That’s good, isn’t it? I think it’s going to be a really

B: Well, £1200 each, flights, accommodation and meals included. But we have to pay an extra
£100 because of the high season.
A: Oh, I’m really jealous. I wanted to go to Italy this summer and I had checked out the prices and
everything but I just haven’t got the time.
