Release agents
Easy and economical release
The release agents from Bakels Aromatic are based on pure vegetable raw materials, carefully
formulated to provide a fine, high-density film of oil that easily releases your products from bands
or tins. Only an extremely thin film is required to cover the baking surface, which makes our
products very economical in use.
In our range of release agents you will find oils for horizontal or vertical application, which are
convenient for release of both hot and cold products. Our oils are easy to apply and evenly
distributed, either by spraying or brush.

Simplifies cleaning and maintenance


Efficient release makes baking tins easier to clean. There is no risk for corrosion of your baking
surfaces. Furthermore, our release agents also inhibit carbonization, i.e. deposition of carbon
residues on the baking surfaces.

GMO and allergen status


In release agents, lecithin is often included as a raw material, which contributes to the releasing
properties of the oil. In order to meet the requirements from our customers, some release agents
from Bakels Aromatic are available with two different versions of lecithin; one originating from soya
and one originating from sunflower.
For producers who want to avoid GMO and allergens in their production, the R-versions
(with rapeseed lecithin) are recommended.

Product quality
All release agents from Bakels Aromatic are neutral in taste in order
not to affect the flavour of the end product.
Our products are oxidation stable, which means that there is no risk for rancidity
that might cause bad taste in baked goods with a longer shelf life.

Factors to consider when choosing release agent


The choice of release agent is as important as using the right recipe and baking times, as a high
quality release agent will pay for itself by reducing the risk for production delays, product loss and
rejects. Among others, the following factors need to be carefully considered:
- adequate release or adhesion properties of the oil depending on your application
- spray or brush
- economical in use
- handling convenience
- water content (corrosion risk)
- risk for carbonization
- oxidation stability
- GMO status
- allergen status

The proper release agent that fulfils your requirements for these factors will directly lead to
improved cost efficiency for your production.

Malt products
Pure natural products
Malt is a natural sweetener and flavour with a unique rich taste that varies from mild
and sweet to deep and robust. It also gives a pleasing appetizing colour.
Malt products promote the fermentative process, by nourishing the yeast so that sugar does not
need to be added to the dough. Furthermore, malt retains moisture in the crumb, which improves
the freshness and prolongs the shelf life of your baked product. Bakels Aromatic’s wide range
of quality malts is based on pure barley, rye or wheat, that have been harvested in northern
Scandinavia. We provide you with all varieties from light and mild malt to dark and strong.

Production process
The process for producing malt is complicated and takes 7-13 days. Fresh raw grains are washed
and soaked for a period of time to soften the grains and begin germination. A constant moisture
is held for 4-5 days to promote growth of the germ. The “green malt” is then dried at various
temperatures for varying periods of time, until the required moisture content is attained.
After this phase in the production process, malt intended for powdered products is ground to
desired particle size, and then packed. Malt intended for liquid extract is ground, prior to being
mashed, boiled and centrifuged. After the terminating evaporation phase, some extracts are also
roasted before being packed.

Enzymatic power
Malt can be diastatic, i.e. have enzymatic power, or non-diastatic. Diastatic malts contain natural
enzymes, which decompose the starch to sugar. They are used for pre doughs, like sourdough,
in order to accelerate the fermentative process. The diastatic power is different in different malt
products and has to be considered when choosing the appropriate malt for your application.

Product quality
The Bakels Aromatic malts are available as liquid extract or as powder.
The liquid extracts have smooth, viscuos consistency that easily disperses in the dough.
Depending on product, the shelf life varies from 4 to18 months.

Naturally pure natural


Malt products from Bakels Aromatic are produced from grains of pure barley, rye or wheat,
which through a special production process are refined into rich liquid malt extracts or powder.
When applying malt, the following benefits will be achieved:
- rich flavour (from mild and sweet to dark and strong)
- nice appetizing colour
- improved baking result considering volume, appearance and freshness
- enzymatic activity that improves the fermentative process

crisp bread. Diastatic malt improves the porosity of the crisp bread and at the same time also
makes it slightly softer.

Baking Malt Special is an ideal malt extract for French and crusty loaves.

Dark Malt Special provides a natural dark colour in all types of brown bread and also
lends a rich malt flavour.

TTT-products, Functional flours and grains

TTT-products are made from pure wheat, rye, barley or oats that have been heat-treated
through a special process and by that have obtained a number of positive and useful
characteristics. Without adding any E-numbers at all to your label, these products will
prolong freshness, improve softness and extend shelf life of your finished bread.
TTT-products can be applied to replace ingredients like guar gums, vital gluten, enzymes
(amylases), pre-gelatinized wheat flour, coldswelling starches, fibre ingredients, milk etc.
in your existing recipe – instead, your bread will be improved by pure natural means.

The TTT-products are made from 4 kinds of cereal;


wheat, rye, barley or oats, and are available in 3 different grades:

Why do baked goods go mouldy?

Alpha-gel emulsifiers for cakes
Benefits of an alpha-gel emulsifier
The optimal physical form of monoglyceride based emulsifiers aimed for cake production is
the alpha-gel phase. This implies that an efficient interaction with batter components starts
already when the emulsifier is added to the batter.
The alpha-gel emulsifier promotes the aeration of the cake batter by effecting the foam
formation, so that a large number of small uniform air bubbles are produced. Furthermore,
it also stabilizes the batter during the baking process and the cake during the cooling.
As a result, your final product will have high volume and an even uniform crumb structure.
Alpha-gel emulsifiers also prolong the freshness of the final product. Due to the efficient
interaction of monoglycerides with starch, the starch retrogradation is delayed so that the soft
and freshly baked appeal of your product remains for a long time.

Low dosage
The pure quality and high concentration of distilled monoglycerides in emulsifiers from
Bakels Aromatic implies that only a very low dosage is required to obtain a substantial
difference in the finished product. Furthermore, the unique combination of different emulsifiers

Product quality
Our alpha-gel emulsifiers come in a convenient paste form that easily disperses in the batter.
In order to meet with our industrial customers’ demands for an easier, more automated
production, we have also developed a unique range of liquid and pumpable alpha-gel
emulsifiers. The products are all of pure vegetable origin and free from GMO and allergens.
Bakels Aromatic alpha-gel emulsifiers have a very low level of trans fatty acids (<1%) and can
easily be combined with liquid oil to further reduce this level also in the baked product.

Aropro – Industrial flavours
Aropro is to be applied for the flavouring of a wide range of flour confectionery products, fillings,
jellies and creams. The product is bake and freeze/thaw stable. Dosage: 0,1-0,2% on total weight.
The Aropro flavours are supplied in 4 kg or 20-25 kg white plastic cans.
