PREFACE
Italian cuisine is known for its diversity and attractiveness, with its own flavor. With
famous dishes such as pizza, spaghetti, steak dishes along with espresso and premium
wine. This is also one of the most popular cuisines and has influenced many different
countries around the world.
Da Vittorio Restaurant of The Reverie Saigon Hotel will be a brand new address for
diners who love Italian cuisine.
Da Vittorio is a premium restaurant brand that has been around for more than 50 years.
Chef Matteo Fontana and Restaurant Manager Luigi Antonio Valentini have jointly
brought this 8-Michelin-starred brand to Vietnam, specifically Ho Chi Minh City. Da
Vittorio restaurants are not only associated with unique culinary arts but also possess a
cozy atmosphere, ensuring customers have the most satisfying experience when enjoying
the taste from the boot-shaped country. After synthesizing some outstanding information
about the restaurant, our team divided the layout into three chapters:

1.1. The location
Situated in the heart of Ho Chi Minh City, Da Vittorio Saigon represents the finest of
Italian fine dining restaurants in all of Vietnam through its alluring atmosphere, world-
class service and an unmistakable culinary style which transports guests from Vietnam’s
most cosmopolitan city to the home of a traditional Italian family on the verdant hillsides
of Lombardy.

1.2. History
Da Vittorio has been an authentic, lively and vital culinary style for over 57 years, thanks
to the intuition of the founders - Vittorio Cerea family. They have been able to combine
the great Italian gastronomic tradition with refined creativity and innovative and
contemporary techniques, makes Da Vittorio one of the true heroes of gastronomic Made
in Italy.

CHAPTER 2: ABOUT DA VITTORIO RESTAURANT
2.1. Design of the restaurant
Da Vittorio Saigon follows the leitmotiv established by the eight Michelin-starred brand
with an emphasis on exquisite fine dining through masterful culinary presentation and
impeccable service in a luxurious setting. The restaurant boasts an area of 1,000 square
metres across two floors with a total capacity for 70 guests. The main dining area can
welcome up to 35 guests. Da Vittorio Saigon features four intimate booths for romantic
rendezvous and a fully-stocked bar with plenty of space for casual get-togethers or
exclusive cocktail events. For corporate dinners and family-style receptions, six private
rooms offer an intimate and exclusive atmosphere with dedicated service.

Beyond the food, the ambiance is a key element of the refined but relaxed experience at
Da Vittorio Saigon. A plethora of highly-trained staff who know every detail about each
dish and bottle of wine available help set a comfortable mood. Rather than standing in the
shadows or being overly attentive, they are active participants in the journey, adding color
and context to each item served. Additionally, they go over the top to make dining at Da
Vittorio Saigon special, making wine pairing recommendations and bringing out perhaps
the highlight of anything to come out of a bottle (at least for this writer): 30-year-old
balsamic vinegar hand-carried from Italy.

2.2. The kitchen
With a particular attention to detail, Chef Matteo Fontana and his team, under the
guidance of Chicco and Bobo Cerea, present refined Italian favourites, including “Da
Vittorio” signature dishes, each crafted to perfection from premium imported and locally-
sourced ingredients. A comprehensive menu prepared using modern techniques explores a
range of culinary styles with an emphasis on classic dishes from the home of the family.
The combination of ingredients, including fresh seafood, imported truffles and homemade
pastas, create expressive notes that ignite the senses through sight, smell, texture and
ultimately incomparable flavour.

The menu at Da Vittorio Saigon faithfully adheres to the culinary program at Da Vittorio's
flagship three-Michelin-star restaurant in Brusaporto, Italy. Among the signature dishes is
the mouthwatering "Vittorio Style Paccheri Pasta," featuring a rich, creamy tomato sauce
that is warmed tableside in a copper pan while fresh parmesan cheese is added by the
spoonful.

Another signature, "Egg à la Egg," has a reputation for single-handedly earning Da
Vittorio its third Michelin star in 2010. Delicate and full of flavor, the dish combines free-
range hen and quail eggs, salmon roe, and potato mousse, and is topped with Oscietra
caviar. Other dishes on the multi-course tasting menus (or à la carte menu) prominently
spotlight fresh seafood.

The first thing to note about Da Vittorio Saigon is its a la carte menu. Da Vittorio does
have a tasting menu (two in fact) but rarely will you find three Michelin-starred
restaurants dishing out both an a la carte menu and multiple carte blanche tasting menus at
the same time during dinner.

CHAPTER 3: TYPES OF MENU IN DA VITTORIO
Caviar dinner: Experience the enchanting allure of caviar, perfectly paired
with fine wines to ignite the senses through sight, smell, texture and ultimately
incomparable flavour.
“In The Tradition Of Vittorio” – Special tasting menu: The eight-course
menu features delicacies such as Egg a la’ egg and superior Oscietra caviar,
“Vittorio” style Paccheri pasta, and Tiramisu in a chocolate sphere.
Meat lovers set menu: Ami la carne? Besides fish signatures, Da Vittorio
Saigon also offers true lovers of meat dishes using only the finest products
from around the world crafted to perfection.
Vegetarian set menu: Recreates Italian fine-dining signatures using local fresh
vegetables hand-picked by chef Matteo Fontana, to deliver an elegant yet
unique culinary experience.
The Caviar Corner: The Caviar Corner, offering a luxurious pre-or post-
dinner rendezvous serving an ultimate selection of the world’s finest caviar as
well as champagnes and vodkas to pair with.

The finest italian cheese: Choose from a delightful trio or a lavish quintet of
Italian cheeses, paired perfectly with homemade jams, honeycomb, nuts, and
more.
Tea pairing: Tea Pairing experience featuring different varieties of tea from
Vietnam. This will be the unique combination that creates a special
impression, captivating the discerning food enthusiasts.

CONCLUSION
Marking a return to normality after the challenges of Covid, the iconic Italian restaurant -
With a grand opening set for October 5th 2022, Da Vittorio Saigon is the latest entry in
the fêted story of Da Vittorio, the prestigious restaurant brand from Lombardy, Italy,
marking its debut in Southeast Asia.Who knows when the Michelin will come but one
thing is for sure and that is Da Vittorio is already a shining star in Vietnam’s culinary
scene.
