Yo, Gingis! Brace yourself for a mind-blowing cookie experience
that will leave you begging for more! Picture this: just last week, I
had the pleasure of hosting my buddy Kevin at my humble
apartment in NYC. Little did I know, he had just visited the
legendary Levain Bakery and couldn't contain his excitement over
their famous cookies. Naturally, we couldn't resist the challenge
of recreating them with our own twist. And thus, the epic Halva-
Walnut-Chocolate cookie was born, destined to rock your taste
buds to the core. Get ready for a flavor explosion like no other as
we combine the heavenly crunch of toasted walnuts with the
irresistible crumble of halva and the sheer decadence of hand-
chopped chocolate. Oh, and let me drop a baking tip on you: by
chopping the chocolate ourselves instead of using boring old
chips, we achieve a mind-blowing melt-in-your-mouth
experience that will have you swooning. But wait, there's more!
We decided to take things up a notch by coating some of these
heavenly cookie balls in toasted sesame. Trust me, the result was
pure magic—a surprisingly delicious and ridiculously well-
balanced creation that takes your taste buds on an exhilarating
journey to the savory side. Don't just take my word for it, Gingis,
you've got to give this tantalizing twist a shot. Your palate will
thank you for the adventure!

Ingredients Directions
500 gr AP flour Step 1
227 gr butter, soften Toast the walnuts on a pan for 2-4 min. Set aside to cool down.
220 gr brown sugar 120 gr walnuts, toasted
120 gr white sugar
10 gr corn starch Step 2
10 gr salt Chop the chocolate into uneven pieces.
10 gr vanilla paste 200 gr chocolate
8 gr baking powder
5 gr baking soda Step 3
2 pasture raised eggs Crumble the halva into chunks.
200 gr chocolate 120 gr halva, pieces
120 gr walnuts, toasted

In a stand mixer's bowl add the butter and the sugars. Using a paddle

attachment, cream until smooth.
227 gr butter, soften
Stand mixer 220 gr brown sugar
Paddle attachment 120 gr white sugar

Scale Step 5
Cutting board Add the eggs, one at a time. Once incorporated, add the second one.

Add the flour, corn starch, salt, vanilla paste, baking powder, and baking
soda. Mix just until incorporated, don't over-mix.
Get ingredients with 500 gr AP flour
10 gr corn starch
10 gr salt
8 gr baking powder
5 gr baking soda
10 gr vanilla paste
Step 7
Add the walnut, chocolate and halva. Mix for 1 min, just until incorporated.
120 gr walnuts, toasted
200 gr chocolate
120 gr halva, pieces

Divide the cookie dough into the desire size of your cookie. I divided mine
into 150 gr pieces. It's a BIG COOKIE!
Step 9
Now you can decide when you want to bake. You can bake right away, keep
in the fridge or in the freezer until you want to bake. There is nothing like a
hot cookie right off the oven.
Step 10
When you wanna bake, set your oven to 350F or 180C.
Step 11
Bake the cookies for 12-14 min if you bake a room temperature cookie dough,
14-16 min for a chilled cookie dough, 15-17 for a frozen cookie dough.

Let it sit for 5 min on the tray.

These cookies were fine on day one... day two however?! I'm obsessed! I scooped and froze about half of them (I like to be
Z able to pop two in the oven whenever I want a treat) and they're even better! So, key takeaway is that if you can let your
batter rest for 12+ hours, they're going to be next level. This is now my go-to chocolate chip cookies! From a logistical point,
I did have to tinker with the timing, but if you know that going in, you're good.
