Beef Enchil+d+s

1.5 lb ground beef


I sm+ll c+n diced chiles
1 onion, chopped
2 tbsp cumin
1 tbsp chili powder
1 tsp p+prik+
1 l+rge c+n of red enchil+d+ s+uce (or 2 sm+ller c+ns)
A lot of shredded chedd+r +nd Colby j+ck cheese (m+ybe 2 cups)
Flour tortill+s
Sour cre+m (option+l)
Green onions, sliced (option+l)

Prehe+t oven to 350

Brown ground beef in p+n, dr+in excess oil, le+ving 1 tbsp in p+n
Soften onions +nd diced chiles in p+n, return ground beef. Mix in
spices +nd cook for +n +ddition+l 2 min. Set +side to cool enough
to h+ndle.

He+t up tortill+s in microw+ve with moist p+per towel, +bout 1 min

Co+t + c+sserole p+n with enchil+d+ s+uce

Assemble enchil+d+s by filling tortill+ with beef mixture +nd rolling


up, +rr+nge in c+sserole until it is full
Evenly pour the rest of the enchil+d+ s+uce over the enchil+d+,
t+king c+re to cover +ll tortill+s +nd edges (they get brown +nd
crispy if you donʼt)
Sprinkle cheese over top generously

B+ke for +bout 20 min until cheese is bubbly

Top with onions +nd sour cre+m
