UGFT 602 : Food Quality Assurance

Descriptive Answers Unit-1


Definition:

1. Food - “Food” means any substance, whether processed, partially processed or


unprocessed, which is intended for human consumption and includes primary food to the
extent.

2. Contaminant - “Contaminant” means any substance, whether or not added to food, but
which is present in such food as a result of the production (including operations carried out
in crop husbandry, animal husbandry or veterinary medicine), manufacture, processing,
preparation, treatment, packing, packaging, transport or holding of such food or as a result
of environmental contamination and does not include insect fragments, rodent hairs and
other extraneous matter.

3. Hygiene - All conditions and measures necessary to ensure the safety and suitability of
food at all stages of the food chain.

4. Quality Assurance - Quality assurance is the process of verifying or determining whether


products or services meet or exceed user expectations. Quality assurance is a process-
driven approach with specific steps to help define and attain goals.

5. Designated Officer - “Designated Officer” means the officer appointed under section 36 .

6. Commissioner of Food Safety - “Commissioner of Food Safety” means the Commissioner


of Food Safety appointed under section 30

7. Food Analyst - “Food Analyst” means an analyst appointed under section45

8. Food Safety Officer - “Food Safety Officer” means an officer appointed under section 37

2. What is Quality Assurance? State general principle of quality assurance.


Ans: 1.Quality assurance is the process of verifying or determining whether products or
services meet or exceed user expectations.
2.Quality assurance is a process-driven approach with specific steps to help define and
attain goals.
3. Fit for purpose = The product should be suitable for the intended purpose.
4. Right first time = Mistakes should be eliminated.

3. Specify crop contaminants and naturally occurring toxic substance by adding its
quantities specified under Food Safety & Standards in tabular form.
Ans: 1. No article of food specified in column (2) of the Table below shall contain any crop
contaminant specified in the corresponding entry in column (1) thereof in excess of
quantities specified in the corresponding entry in column (3) of the said table :

4. Objectives of FSS Act 2006 ?
Ans : 1. To consolidate the laws relating to food.
2. To establish the Food Safety and Standard Authority of India for laying down science
based standards for articles of food.
3. To regulate their manufacture, storage, distribution, sale and import of food.
4. To ensure availability of sage and wholesome food for human consumption.

5. Features of the Act 2006 ?


Ans : 1. All big manufacturing facilities will need to be licensed by central licensing authority
FSSAI.
2.Small players, warehouses/distributors will need to obtain valid license from state license
authority.
3. All licensed establishment will be subject to periodical inspections and food safety audits
by respective incensing authority.
4. FSMS plan and food recall process.
5. Reduction in court case by adjudication process.
6. Import regulation.
7. New section of food categorization :section 22
8. More scope for product innovation.
9. New documents of label claims and claim substantiations.
10. New formats will come under food.

6. Functions of Quality Assurance ?


Ans : 1.To maintain standards & specification for all raw material & finished product.
2. To give service to company in all areas related to product quality includes trouble
shooting, visiting, production, facilities, designing and training Quality control panel.
3. To produce information that is accurate, reliable and adequate for the intended purpose.
4. Evaluating performance, service, of the quality of a product against a system, standard or
specified requirement for customers
