Berry White Chocolate Mousse

6 oz. white chocolate, chopped
1 ⁄ 3 cups heavy cream
1
21 ⁄ 2 cups raspberries
3 Tbs. sugar
White chocolate curls (optional)
In microwave-safe bowl, mix chocolate and 1 ⁄ 3 cup
cream; microwave in 15-sec. intervals, stirring, until
melted; cool. In food processor, puree 2 cups raspber-
ries and sugar. Using spoon, push through strainer.
On medium-high speed, beat remaining cream until
stiff. Fold into chocolate mixture; reserve 1 cup. Fold
raspberry puree into remaining chocolate mixture.
Alternately spoon mousses into glasses. Cover; chill.
Top with remaining berries and, if desired, curls.

⁄ 2 cup superfine almond flour
1 (17.5 oz.) pkg. sugar cookie mix
⁄ 2 cup butter, at room temp.

1 egg
1 tsp. almond extract
Assorted colors cookie icings
Heat oven to 350°F. Stir almond flour into cookie mix;
add butter, egg and extract. Stir until dough forms.
Working with half of dough at a time, on lightly
floured surface, roll out to 1 ⁄4" thickness. Using 3"
cookie cutters, cut out shapes rerolling scraps. Transfer
to ungreased baking sheets. Bake until edges start to
brown, 8–10 min. Cool. 5 min. Transfer from baking

sheets to racks; cool. Decorate as desired with icings.
