through a wide range of food offerings. Frankfurt's cuisine is a fusion of old and new, with
a focus on preserving traditional flavors while embracing innovation in cooking techniques
and ingredients.

Delicacies
This might be true that European countries were prone to famine, but this didn't stop
skilled noble chefs to develop cuisines influenced by modern innovations. One of them
being Chef Yasar Gür. Chef Gür is known for his creative burger recipes, homemade buns,
and high-quality ingredients. His restaurant offers a unique blend of traditional German
flavors and international influences. While other chefs at The chef at Apfelwein Solzer is
known for his commitment to using fresh and high-quality ingredients to create authentic
Frankfurt specialties.

Frankfurt is famous for its traditional German dishes like Frankfurter Rippchen (cured and
slow-cooked pork cutlets), Rindswurst (beef sausage), Frankfurter Kranz (ring-shaped
cake), Handkäse mit Musik (sour milk cheese), Grüne Soße (green sauce), and Äppelwoi
(apple cider).

Frankfurter Rippchen
Frankfurter Rippchen are a traditional specialty of Hessian cuisine, but are also eaten in
other regions and are called Rippchen or Rippli there.
They consist of cured pork cutlets that are slowly cooked in sauerkraut or meat broth.
Frankfurter Rippchen are usually served warm with sauerkraut, mashed potatoes, and
mustard. Apfelwein (German cider) is commonly consumed alongside the dish.
Frankfurter Rippchen are similar in appearance and texture to Kasseler, but have
a
slightly milder flavor since they are only cured, rather than smoked.
The dish is a popular menu item at traditional Frankfurt restaurants like
Apfelwein
Wagner, where it is grilled and served with sauerkraut. Frankfurter Rippchen are
considered a signature dish of the Frankfurt culinary scene.
Rindswurst

Rindswurst is a type of German beef sausage made from beef and beef fat. It is a pure beef
sausage that is popular in Frankfurt and other regions. The sausage is typically seasoned
with spices like salt, pepper, paprika.Rindswurst is often smoked and then boiled before
being enjoyed warm. It is a traditional German sausage that can be served in various
ways, such as with a fresh roll or alongside potato salad. The recipe for Rindswurst
involves grinding beef and beef fat, mixing them with spices, stuf ing the mixture into
casings, smoking, and then poaching the sausages until cooked through. Rindswurst is a
flavorful and versatile sausage that is enjoyed for its rich taste and traditional preparation
methods.
Rindswurst
Frankfurter Kranz
This one's so far my favourite. The way it is presented makes someone, who doesn't even
have a sweet tooth, to come over and take a bite!
The Frankfurter Kranz is a classic German cake specialty that originated in Frankfurt,
Germany. It consists of a sponge cake baked in a ring-shaped pan, sliced horizontally into
layers, and filled with buttercream and jam.
Key features of the Frankfurter Kranz include:
 A firm sponge cake base baked in a ring mold
 Layers of buttercream and red jam (typically strawberry, blackcurrant or cherry)
between the cake rings

The outside of the cake is coated with more buttercream and topped with caramel-
covered brittle nuts called Krokant, toasted almond flakes and/or ground hazelnuts

The top is decorated with swirls of buttercream and cherries or raspberries to

resemble a crown
The cake's round shape and golden nut topping are meant to symbolize a crown,
referencing Frankfurt's history as the coronation city of the Holy Roman Emperors. It is
considered reminiscent of Frankfurt and a signature dessert of the city.
Handkäse mit Musik

It consists of a regional sour milk cheese served with a topping of raw, white onion
vinaigrette marinated in oil, vinegar, and apple wine. The name's origin is a playful
reference to the potential flatulence caused by consuming raw onions, but the real reason
behind the name is the historical practice of serving the onion sauce on the side, creating a
musical sound when carried on a plate.
To prepare "Handkäse mit Musik," you will need ingredients like onion, sunflower oil,
Handkäse or Harzer cheese, apple wine, apple vinegar, and German Rye-Wheat
Sourdough Bread for serving, among others. The process involves marinating the cheese
with finely chopped onions and oil, then adding apple vinegar and apple wine before
serving with optional toppings like caraway seeds, paprika powder, and buttered bread.
This traditional dish is enjoyed in Frankfurt and the Southern Hesse region, often paired
with tart apple cider or local white wine.
Just think of eating the cheese, you could already imagine the velvety tartness beneath and
all over your your buds.
Apple Wine

Apple wine is a delightful beverage made from apples, of ering a unique and refreshing
taste. It can be enjoyed in various forms, including non-alcoholic versions like apple cider
wine or alcoholic apple fruit wine. The process of making apple wine typically involves
ingredients like apple juice, sugar, yeast nutrient, pectic enzyme, acid blend, wine tannin,
and wine yeast, among others. The fermentation process is crucial, requiring stable
temperatures and proper sanitation to ensure a successful outcome.
Apple wine can be purchased online from various retailers like Amazon, Dev's Coorg
Spices, and GotoLiquorStore, of ering a range of options for enthusiasts to explore and
enjoy. Whether you prefer a non-alcoholic apple cider wine or an alcoholic apple fruit
wine, there are choices available to suit dif erent preferences.

Grüne Soße
Frankfurt's famous Green Sauce, known as "Grüne Soße" in German, is a traditional cold
herb sauce that originated in Frankfurt, Germany. It is made from a blend of seven specific
herbs:
 Sorrel (Sauerampfer)
 Chervil (Kerbel)
 Chives (Schnittlauch)
 Parsley (Petersilie)
 Burnet (Pimpinelle)

Garden cress (Kresse)

Borage (Borretsch)
The herbs are finely chopped and mixed with a dairy base, typically a combination of sour
cream, yogurt, and/or crème fraîche. Other common ingredients include hard-boiled eggs,
olive oil, lemon juice, vinegar, mustard, salt, and pepper.
In Frankfurt, the fresh herbs are sold pre-packaged at local markets, making it easy to
prepare the sauce. However, outside of the Frankfurt region, finding all seven herbs can be
challenging. Substitutions can be made, but the flavor will not be exactly the same.
Frankfurt's Green Sauce is traditionally served cold, often as a topping for boiled potatoes
or hard-boiled eggs. It can also be enjoyed with cold meats, fish, or as a dip. The sauce is
a beloved springtime dish in Frankfurt and the surrounding Hessen region. I think we see its regional
variations in many eastern and south eastern countries due to globalisation. It enabled long-distance
cultural links between almost completely different communities.
Fine Dining
Just mentioning these cuisines without however offering a place to savour them must look like a
crime. Frankfurt’s true culture could be reflected among its delicacies and culinary scene more than
its murals and monuments.

"Food is everything we are. It's an extension of nationalist feeling, ethnic

feeling, your personal history, your province, your region, your tribe, your
grandma. It's inseparable from those from the get-go." – Anthony Bourdain

And so it is. When we eat food we are not only warming our taste buds but we are consuming
its history, all the efforts made by the chef and all the miniscule events that led to its
presentation and its invention.
