Leche Flan Recipe

Ingredients:
- 10 egg yolks
- 1 can (14 oz) sweetened condensed milk
- 1 can (12 oz) evaporated milk
- 1 cup granulated sugar (for caramel)
- 1 tsp vanilla extract

Instructions:
1. Prepare the caramel:
- In a saucepan over low heat, melt the sugar until it turns golden brown.
- Quickly pour the caramel into a llanera (flan mold) or round baking dish,
tilting to coat the bottom evenly. Set aside.

2. Make the flan:


- In a large bowl, gently whisk together egg yolks, sweetened condensed milk,
evaporated milk, and vanilla extract until smooth.
- Strain the mixture through a fine sieve to remove any lumps or bubbles.

3. Pour the flan mixture into the caramel-lined mold.

4. Cover the mold with aluminum foil.

5. Steam or bake:
- For steaming: Place the mold in a steamer and steam for 30–35 minutes or until
set.
- For baking: Place the mold in a larger pan with hot water (water bath) and
bake at 350°F (175°C) for 45–50 minutes.

6. Let the flan cool to room temperature, then refrigerate for at least 4 hours or
overnight.

7. To serve:
- Run a knife around the edges of the flan.
- Invert onto a serving plate to release the caramel sauce on top.
