sustainability, and quality, Refresh collaborates closely with local farmers and employs advanced technologies
to ensure the freshness and nutritional value of their products. Their extensive product range includes IQF
(Individually Quick Frozen) fruits and vegetables, which are exported to various regions in Asia and Europe.
Refresh Agrifoods is dedicated to offering healthy, tasty food with minimal preparation time, making it a
trusted name in the frozen foods market
Industry Profile
The frozen food industry is a competitive market that includes a variety of products, such as frozen fruits,
vegetables, meat, seafood, dairy, and prepared meals. Some of the leading companies in the frozen food industry
include Unilever, Nestle, General Mills, The Kraft Heinz Company, Tyson Foods, and Conagra Brands.
Freezing food preserves it from the time it is prepared to the time it is eaten. Since early times, farmers,
fishermen, and trappers have preserved grains and produce in unheated buildings during the winter season.
Freezing food slows decomposition by turning residual moisture into ice, inhibiting the growth of most
bacterial species. In the food commodity industry, there are two processes: mechanical and cryogenic (or flash
freezing). The freezing kinetics is important to preserve the food quality and texture. Quicker freezing
generates smaller ice crystals and maintains cellular structure. Cryogenic freezing is the quickest freezing
technology available due to the ultralow liquid nitrogen temperature −196 °C (−320 °F).[2]
Preserving food in domestic kitchens during modern times is achieved using household freezers. Accepted
advice to householders was to freeze food on the day of purchase. An initiative by a supermarket group in
2012 (backed by the UK's Waste & Resources Action Programmed) promotes the freezing of food "as soon as
possible up to the product's 'use by' date". The Food Standards Agency was reported as supporting the change,
provided the food had been stored correctly up to that time.
Frozen food packaging must maintain its integrity throughout filling, sealing, freezing, storage, transportation,
thawing, and often cooking. As many frozen foods are cooked in a microwave oven, manufacturers have
developed packaging that can go directly from freezer to the microwave.
1
Grofresh Agrofoods Private Limited
In 1974, the first differential heating container (DHC) was sold to the public. A DHC is a sleeve of metal
designed to allow frozen foods to receive the correct amount of heat. Various sized apertures were positioned
around the sleeve. The consumer would put the frozen dinner into the sleeve according to what needed the
most heat. This ensured proper cooking.
Today there are multiple options for packaging frozen foods. Boxes, cartons, bags, pouches, Boil-in-Bags,
lidded trays and pans, crystallized PET trays, and composite and plastic cans.
Scientists continue to research new aspects of frozen food packaging. Active packaging offers many new
technologies that can actively sense and then neutralize the presence of bacteria or other harmful species.
Active packaging can extend shelf-life, maintain product safety, and help preserve the food over a longer
period of time. Several functions of active packaging are being researched.
The speed of freezing has a direct impact on the size and the number of ice crystals formed within a food
product's cells and extracellular space. Slow freezing leads to fewer but larger ice crystals while fast freezing
leads to smaller but more numerous ice crystals. This difference in ice crystal size can affect the degree of
residual enzymatic activity during frozen storage via the process of freeze concentration, which occurs when
enzymes and solutes present in a fluid medium are concentrated between ice crystal formations. Increased
2
Grofresh Agrofoods Private Limited
levels of freeze concentration, mediated by the formation of large ice crystals, can promote enzymatic
browning.
Large ice crystals can also puncture the walls of the cells of the food product which will cause a degradation
of the texture of the product as well as the loss of its natural juices during thawing. That is why there will be
a qualitative difference observed between food products frozen by ventilated mechanical freezing, non-
ventilated mechanical freezing or cryogenic freezing with liquid nitrogen.
According to a 2007 study, an American consumes frozen food on average 71 times a year, most of which are
pre-cooked frozen meals
The freezing technique itself, just like the frozen food market, is developing to become faster, more efficient
and more cost-effective. As demonstrated by Birdseye's work, faster freezing means smaller ice crystals and
a better-preserved product.
Birdseye's original cryogenic freezing approach using immersion in liquid nitrogen is still used. Due to its
cost, however, use is limited to fish fillets, seafood, fruits, and berries. It is also possible to freeze food by
immersion in the warmer (at −70 °C (−94 °F)), but cheaper, liquid carbon dioxide, which can be produced by
mechanical freezing (see below).
Most frozen food is instead frozen using a mechanical process using the vapor-compression refrigeration
technology similar to ordinary freezers. Such a process is cheaper at scale, but is usually slower. (There is also
more upfront investment in the form of construction.) Nevertheless, a wide variety of processes have been
devised to achieve faster heat transfer from the food to the refrigerant.

10
Grofresh Agrofoods Private Limited
2. PEELING :
Peeling is a common unit process for many fruits and vegetables to produce fresh-cut, minimally processed,
and canned food products. Mechanical peeling utilizes knives,
blades, or abrasive devices to remove the undesirable part directly from raw food materials. Lye peeling, also
known as caustic peeling, is a chemical method used for peel removal of thin-skinned products, where raw
food materials are exposed to a heated solution containing caustic chemicals that can dissolve the skin. The
steam peeling technique involves placing raw fruits or vegetables inside a pressure vessel, and exposing them
to high temperatures and pressurized steam for rapid heating in a short period.
3. DICING /SLICING :
Use a revolving impeller with a knife blade to cut fruits and vegetables into cubes or dices.
Magura DICECUT: This machine can cut frozen fruits and vegetables into cubes or strips without the need
for long tempering. It can process fruits and vegetables in a wide range of temperatures and block formats.
Magura guillotine style machines and rotary drums: These machines can cut frozen, fresh, or tough foods
into slices, dices, or pieces.
Grading: The process of sorting fruits and vegetables into categories based on their physical characteristics.
Grading is done to fetch higher prices in the market. Fruits and vegetables are graded based on factors such as
weight, size, color, shape, specific gravity, and freedom from diseases. Grading can be done manually or
mechanically. Manual grading is based on visual observation, while mechanical grading uses a conveyor belt
and bag to sort the produce. Electronic grading systems are also becoming more popular.
Temperature : Quick frozen products should be at least -15°C or colder, and other frozen products should be
at least -12°C or colder. You can use an appliance thermometer to monitor the temperature.
Packaging : Make sure the packaging is sealed and check for evidence of pests.
Dates : Check the best before and use by dates. Use by dates indicate the safe limit for consuming food.
Condition: If the food is partly frozen, still has ice crystals, or is as cold as if it were in a refrigerator (40°F),
it is safe to refreeze or use.
11
Grofresh Agrofoods Private Limited
5. FREEZING:
Freezing is the process that causes a substance to change from a liquid to a solid. Freezing occurs when the
molecules of a liquid slow down enough that their attractions cause them to arrange themselves into fixed
positions as a solid.
Blast Freeze followed by cold storage ensures better preservation of taste and nutritional values. Our freezing
solutions guarantee a high and uniform product quality and cost savings through improved yield.
Weight : Pre-packaged fruits and vegetables must have the net weight of the product on the container. Net
weight is the weight of the goods without the bag, wrapper, or container. Loose or non-prepackaged items
must be sold by net weight or gross weight. Gross weight is the weight of the goods plus the weight of the
bag, wrapper, or container.
Packaging: Fruits and vegetables can be packaged in a variety of containers, including sacks, crates, cartons,
baskets, and pallet boxes. Paper bags are a sustainable option that can reduce mold formation and extend shelf
life.
Active packaging : This type of packaging can help maintain or improve the conditions of the packaged fruits
and vegetables, such as by inhibiting the growth of microorganisms.
Aseptic packaging :This process involves filling a pre-sterilized food product into sterile packaging materials
without reheating for sterilization.
Protection: Packaging can protect fruits and vegetables from environmental conditions like moisture loss,
mechanical damage, oxidation, and light. This can help extend the shelf life of the product.
7. COLD STORAGE
Blast Freeze followed by cold storage ensures better preservation of taste and nutritional values. Our freezing
solutions guarantee a high and uniform product quality and cost savings through improved yield. At the end
of the process, we get the frozen fruit, pulp and juices ready to be used as ingredients by you.
Temperature: The ideal temperature for storing fruits and vegetables is between 35–40°F (1.6–4.4°C).
Humidity: The humidity level should be monitored to prevent the produce from deteriorating too quickly.
Separation: Store fruits and vegetables separately, as some fruits, like apples, bananas, peaches, and pears,
can make other fruits and vegetables ripen and rot faster.
12
Grofresh Agrofoods Private Limited
Containers: Use reusable plastic bags, lidded plastic containers, or lightweight stainless steel containers to
store produce.
Crisper drawer: Store vegetables in the crisper drawer of your refrigerator, which usually has its own
humidity controls.
Wrapping: Wrap leafy greens in a dry paper towel and place them in a breathable bag.
Ventilation: Ensure that fruits and vegetables have good air circulation and are not packed too tightly in the
fridge.
Freezing: Freeze surplus fruits and vegetables at peak ripeness to preserve their quality.

QUALITY CONTROL
Quality Control (QC) and Quality Assurance (QA) play crucial roles in the export of frozen fruits and
vegetables, particularly in ensuring compliance with the Food Safety and Standards Authority of India
(FSSAI) regulations and the requirements of destination countries.
Quality Assurance (QA) involves the systematic processes that ensure products meet specified quality
standards throughout production. This includes establishing protocols for compliance with FSSAI
regulations, which govern the safety, quality, and hygiene of processed fruits and vegetables.
Quality Control (QC) focuses on the inspection and testing of products to confirm they meet quality
standards. This includes verifying that frozen fruits and vegetables comply with both FSSAI requirements
and those set by importing countries.
1. Compliance with FSSAI Standards: QA processes are designed to align production practices with FSSAI
regulations, which include guidelines for safe processing methods, permissible ingredients, hygiene practices,
and packaging standards. These regulations help prevent contamination and ensure that products are safe for
consumption.
2. Meeting Destination Country Requirements: QC ensures that exported products conform to the specific
safety and quality standards of the destination country. This may involve additional inspections or
certifications to meet international standards such as ISO and HACCP, which are often required by importing
nations.
3. Product Testing and Certification: QC includes rigorous testing of frozen produce to verify compliance
with both FSSAI standards and those of the importing country. Export Inspection Agencies conduct
inspections and issue certificates of inspection only after confirming that products meet all necessary criteria.
14
Grofresh Agrofoods Private Limited
5. Cold Chain Management: Ensuring proper cold chain management is critical in preserving the quality of
frozen fruits and vegetables during transport. QA processes establish guidelines for maintaining temperature
controls throughout production, storage, and transportation to prevent spoilage.
In summary, QA ensures that processes align with regulatory standards while QC verifies product compliance
at various stages. Together, they are vital for ensuring that frozen fruits and vegetables are safe, high-quality,
and compliant with both FSSAI regulations and the requirements of destination countries.

logistical problem could actually be a promotional problem
Popularize the brand image: The types of stores in which a product is sold can shape and reinforce a
consumer's image of that brand. For example, a premium brand of frozen meat and fish may choose to be
distributed exclusively in high-end retail stores. In contrast, a brand targeting the mass market can seek
distribution in every channel and every corner of the economy.
Confront with competitors: If a manufacturer knows that a major competitor is planning to massively
expand its online presence and direct-to-consumer business, they may actively expand direct-to-consumer
distribution as a deterrent or delay tactic to curtail competitor action.

SWOT ANALYSIS
SWOT Analysis states the organizational strengths, weakness, opportunities, and threats. Strength weakness
pertain to the internal configuration and while opportunities and threats belong to external configuration. A
focus on the company internal environment helps in understanding its capacity weakness and important
consideration in its activities and actions for efficiency and sustainability. A critical analysis of the environment
with which the company operates, reveals the following core strength, weakness, opportunities, threats.
STRENGTHS:
The demand for products that may be conveniently and quickly prepared, such as frozen meals, is rising as
more and more people lead hectic lifestyles. People are more likely to spend money on convenience goods
while adding nutritional value to their daily diet. With more and more women leaving the traditional kitchen
roles and taking the corporate world with a breeze, the lesser the time it takes to prepare a meal the more it is
preferred. This market has tremendous growth opportunities and will evolve with time.
58
Grofresh Agrofoods Private Limited
The demand for frozen ready meals is rising due to rapid urbanization and changing consumer lifestyles. The
boost in convenience, availability, affordability and accessibility of frozen-ready meals makes it an excellent
choice for satisfying customers’ daily nutritional needs quickly.
Not many of you are well versed in the benefits of a well-known method of food preservation – “Freezing”.
Utilizing artificial preservatives traditionally v/s modern quick-freezing techniques locks the nutritional value
of the food. Additionally, food that is kept and frozen right away avoids loss of nutrition. In terms of calories,
frozen fruits and vegetables have the same nutritional value as compared to fresh foods. With no extra
potassium added as a preservative, frozen food becomes an apt choice for quick food solutions.
With a massive number of supermarkets and stores housing frozen food items, you can buy and consume
frozen food on the go making it so convenient and ideal for people looking for a healthy quick meal. Over and
above that, it also assists you in portion control and resisting you the urge to overeat at a restaurant. Helping
you save money and time; frozen foods have turned their coins towards health as well as variety.
Frozen meals can aid in reducing food waste. Food wastage at home or at the workplace can be considerably
minimized by only preparing what is required for the meal at hand and re-freezing the rest for future use.
WEAKNESS
It is recommended to watch for some particular ingredients, especially if you know you are allergic to some.
When someone suffers from a food allergy, their immune system responds to particular foods, which can lead
to minor skin problems or discomfort with hypertension. It is a good habit to run your eyes through the
ingredients list on every frozen food package before making a purchase.
59
Grofresh Agrofoods Private Limited
Not all frozen foods have preservatives, but sadly some do. To enhance the shelf life of the consumable, some
frozen food brands add harmful preservatives which can affect our health badly. These preservatives have the
potential to not only cause serious health problems in some people but also can attract fetal diseases. Thrive
for products that claim they do not add preservatives for a healthier choice.
The flavor of freshly cooked food may not always be the same when it’s frozen. The traditional notion is that
major food producers are also responsible for diminishing the taste of processed frozen foods as they tend to
prepare them in large batches, which at times compromises taste.
OPPORTUNITY
Two of the most recent trends propelling the frozen food sector are online grocery shopping and the launch of
new apps that make it simple for users to select their desired products. Consumers are more inclined to shop
as a result of benefits like convenience, choice, and product information online.
The global frozen food market has been expanding steadily in recent years due to numerous factors, including
the ability to save money, prepare meals quickly, spend less time in the kitchen, and avoid food wastage.
Due to the rising demand for frozen food, the frozen food sector, which first just offered basic frozen veggies
and fries, now provides a wider range of products like fully packed wholesome frozen meals. Over and above
this to satisfy your 5 pm cravings they also have also stepped into healthy snack items to keep your tummy
happy till dinner time.
THREATS
High-stakes competition
There has been a fierce rivalry in the frozen food business as a result of the rising demand for frozen meals.
To maintain its market and boost sales, the business must assure not only quality but innovation to keep its
consumers griped and longing for more.
60
Grofresh Agrofoods Private Limited
Prices for raw goods like flour, vegetable oil, and uncooked vegetables have increased significantly. Such
heavy investments in raw materials put price pressure on the total annual expenses of an organization. In order
to balance this cash outflow, organizations then tend to lower costs in packaging or employees.
Globally, especially in developing countries, health awareness is taking a whole new meaning compared to
traditional thinking, which may lead to a decrease in the consumption of frozen and fast foods. Knowledge is
power and being informed about some frozen foods myths and facts will turn tables for the frozen foods
market.

This force analyses the ability to enter a market by new entrants. They will add new capacity to market and
therefore drive down prices. If it's easy to enter a new market will depend on the market barriers, for example
the need of "economic of scale" brand loyalty by customers, or extensive knowledge on a product or service,
but also capital requirement or government policies.
Barriers to Entry:
Capital Requirements: Moderate; setting up production facilities and maintaining cold storage involves
significant investment.
Economies of Scale: Large existing players benefit from cost efficiencies, making it harder for new entrants.
Brand Loyalty: Established brands hold consumer trust, creating a barrier for newcomers.
Opportunities for Entrants: Growth in health-conscious or organic frozen food niches could offer entry
points.
Overall Impact: Medium. Established players have an advantage, but niche markets provide opportunities
for new entrants.
This force analyses the possibility of the replacement of a product or service in the market by an alternative
that isn't equal by fulfils the same functions. Substitution can have a big impact on a market and will have a
huge profitability impact and should therefore be considered when evaluating the attractiveness of an industry.
It includes
Substitutes: High. Fresh food, ready-to-eat meals, and delivery services act as substitutes.
Convenience vs. Quality: Frozen food is convenient, but fresh and ready-to-eat options are perceived as
healthier.
Overall Impact: High. Substitutes significantly challenge the frozen food industry, especially in urban
markets.
3. Competitive rivalry
The rivalry between existing competitors is examined by how many existing competitors there are in a market
and what their capability are rivalry is high in a market with competitors that are approximately of the same
size and their offering is roughly the same.
Competitors: The market includes global giants (e.g., Nestlé, Conagra) and regional players.
67
Grofresh Agrofoods Private Limited
Differentiation: Companies compete on price, product variety, innovation (e.g., plant-based options), and
marketing.
Growth Rate: Moderate growth, especially in health-focused segments, adds to the rivalry.
Overall Impact: High. Intense competition forces constant innovation and price competitiveness.
This force analyses the power buyers have over suppliers and therefore the company to influence the market
prices. When there are a limited number of buyers and many suppliers in the market, they will have more
buying power. It means that the buyers can easily switch to an alternative.
Availability of Alternatives: High. Consumers have many choices, including competing brands and fresh
food options.
Price Sensitivity: Significant. Many consumers prioritize price over brand loyalty, particularly in budget-
conscious markets.
Trends: Growing demand for health-conscious frozen foods could empower buyers to demand higher quality
or innovation.
Overall Impact: High. Buyers have substantial power due to numerous options and price sensitivity.
This force analyses the power and control that a supplier has to (potentially) raise its prices or to reduce the
quality of products or services. Important factors that play a role are the availability of substitute and the
concentration of suppliers. The less suppliers the more power to control the market other Factors include
switching costs, the availability of substitutes, the strength of their distribution channels, and the differentiation
in the product or service. It indicates:
Suppliers' Dependency: Many suppliers of raw materials (vegetables, fruits, packaging) exist, reducing their
individual power.
Suppliers of specialized ingredients (organic, gluten-free, etc.) may have higher bargaining power.
Switching Costs: Low for basic materials but higher for specialized ingredients.
Overall Impact: Low to Moderate. Standard suppliers have limited power, but niche ingredient suppliers hold
some influence.
