Chicken Fajitas with Pineapple

The smoked paprika adds a lovely charred flavour to this recipe, you
could also cook the chicken mixture on a barbecue for extra flavour.

Ingredients
2 Tortilla Wraps (80g), Wrap In Foil 2 Tablespoons Lime Juice (40g)
1 Red Onion (150g), Peeled, Sliced 1g Olive Oil Spray
1/2 Green Capsicum (50g), Thinly 2 Cups Chinese Cabbage (170g),
Sliced Shredded
300g Raw, Lean Chicken Breast, 1 Cups Fresh Pineapple, Peeled
Nutritional Information (per serve*)
Thinly Sliced (140g), Chopped
1 Pinches Smoked Paprika (2g) 100g Cherry Tomatoes, Quartered Calories 342 Cal
1 Pinches Ground Cinnamon (2g) 30g Low Fat Natural Yoghurt
Protein 39.7g

Method Fat Total 15.5g

1. Preheat oven to 180C. Put tortillas into the preheated oven.
Combine, onion, capsicum, chicken, smoked paprika and cinnamon and half of Carbohydrates 31.1g
the lime juice in a bowl, mix well to coat the chicken. Spray with oil.
Sugars 15.0g
2. Heat a non- stick frying pan over a medium- high heat, add the chicken
mixture and cook for 5 minutes or until the chicken is tender. Sodium 105.6mg

3. Combine cabbage, pineapple, cherry tomatoes and remaining lime juice in a Dietary Fibre 8.6g
bowl.
* This recipe has 2 serves.
4. Serve the chicken fajita mix with the warm tortillas, pineapple slaw and
accompany with the low fat yoghurt.

Mish Tips

Freeze any leftover tortillas in packets of two, next time you want to use them
simply take them out of the freezer and pop them into the oven, allow a little
extra time for cooking.

Any leftover slaw can be eaten as a salad or used in wraps or on burgers.

Chinese cabbage is also known as Wombok, it is great in stir fries, soups and
salads.
