Honey-Roasted Sweet Potatoes
This recipe creates beautifully caramelized and tender sweet potatoes with a delicious
honey-cinnamon glaze. They are incredibly simple to make and serve as a fantastic side dish
for roasted chicken, pork, or holiday meals. The natural sweetness of the potatoes is
enhanced by the warm, sticky glaze.

Ingredients
● 3 large sweet potatoes (about 2.5 pounds or 1.1 kg), peeled and cut into 1-inch cubes
● 1/4 cup (60ml) olive oil
● 1/4 cup (85g) honey
● 1 teaspoon ground cinnamon
● 1/2 teaspoon salt
● 1/4 teaspoon black pepper
● Optional garnish: chopped fresh parsley or pecans
Instructions
1. Preheat Oven and Prepare Pan:
● Preheat your oven to 400°F (200°C).
● Line a large baking sheet with parchment paper for easy cleanup.
2. Prepare the Glaze:
● In a large bowl, whisk together the olive oil, honey, ground cinnamon, salt, and black
pepper until well combined.
3. Coat the Sweet Potatoes:
● Add the cubed sweet potatoes to the bowl with the honey mixture.
● Toss everything together until the sweet potatoes are evenly and thoroughly coated.
4. Arrange and Roast:
● Spread the coated sweet potatoes in a single layer on the prepared baking sheet. Make
sure they are not overcrowded to ensure they roast instead of steam.
● Roast for 25-35 minutes, flipping them halfway through the cooking time.
● The sweet potatoes are done when they are tender, and the edges are caramelized and
slightly browned.
5. Serve:
● Remove the baking sheet from the oven.
● If desired, garnish with fresh parsley for a touch of color or chopped pecans for a bit of
crunch.
