Honey-Roasted Sweet Potatoes

This recipe creates beautifully caramelized and tender sweet potatoes with a delicious

Ingredients
●​ 3 large sweet potatoes (about 2.5 pounds or 1.1 kg), peeled and cut into 1-inch cubes
●​ 1/4 cup (60ml) olive oil
●​ 1/4 cup (85g) honey
●​ 1 teaspoon ground cinnamon
●​ 1/2 teaspoon salt
●​ 1/4 teaspoon black pepper
●​ Optional garnish: chopped fresh parsley or pecans

Instructions
1. Preheat Oven and Prepare Pan:
●​ Preheat your oven to 400°F (200°C).
●​ Line a large baking sheet with parchment paper for easy cleanup.
2. Prepare the Glaze:
●​ In a large bowl, whisk together the olive oil, honey, ground cinnamon, salt, and black
pepper until well combined.
3. Coat the Sweet Potatoes:
●​ Add the cubed sweet potatoes to the bowl with the honey mixture.
