ACKNOWLEDGMENT
We would like to take this opportunity to express
our heartfelt gratitude to our school for offering us
a chance to learn how to cook various healthy and
mouth-watering dishes. Moreover, we are
immensely grateful to our home economics
teacher, Miss Ho, for teaching us how to cook in a
caring and kind attitude. Additionally, no words
can ever express our thankfulness to our janitor
for helping us in every lesson.

INTRODUCTIO
N
The dish we are going to introduce you to is Ji Li Beng.
To start with, Ji Li Beng is a famous local dish which is
tremendously delicate and mouthwatering, belonging
to Hebei cuisine. The main ingredients of this dish are
prawns and domestic chicks. As soon as one catch
sight of this appealing dish with healthy vegetables
such as onion, ginger and garlic added, one will
definitely be extremely eager to try it. Actually, it's
really delicious and flavoursome. It is a perfect dish
that is both easy to cook at home and exceptionally
entertaining!
Ingredients for our dish Seasoning:
Chicken thigh, shrimp, green, yellow and Salt, chicken essence, pepper, cooking wine,
red peppers, fried peanuts, onions, vinegar, sugar, soy sauce, starch, dried chili,
ginger, garlic pepper, chili noodles
Undoubtedly, our dish is tremendously healthy because we included heaps of
vegetables, such as green, yellow and red peppers, onions, ginger garlic. Let us
bring you to an eye-widening journey of the health benefits of the vegetables
included in our dish. For instance, green peppers are not only high in iron, but
they're also rich in Vitamin C, which can help your body absorb iron more
efficiently. This combination makes green peppers a superfood when it comes to
preventing and treating iron-deficient anemia.
河 Hebei
北 Hebei is a northern Chinese province near Beijing that is home to
Chengde Mountain Resort, the imperial summer residence of the
Qing-dynasty emperors.
Cooking methods :
First method
Main Ingredients: chicken, shrimp
Accessories: ginkgo, onion, ginger, garlic, green and red pepper
Seasoning: salt, chicken essence, cooking wine, pepper, vinegar, sugar, water starch
Cooking method :
1. Separate diced chicken and shrimp for use. Take a small bowl and add minced
onion, ginger and garlic, cooking wine, salt, chicken essence, sugar, pepper, water
starch, and water to make a juice;
2. Put the diced chicken and shrimp in the pan and pour the oil,
add in the diced chicken and shrimp, and fry until cooked.
Remove the bottom oil, add green and red peppers, ginkgo,
diced chicken, and shrimp, pour in the prepared juice, stir fry
quickly, and pour a little Vinegar is ready.
Qing
Story Behind The Dish Dynasty
According to records, Emperor Kangxi's royal boat was moored at the
Guolikou Palace in Baiyangdian, Anzhou, Baoding Prefecture. Zhang
Tingyu, a scholar, and Zhao Hongxie, governor of Zhili, were on hand.
When it was almost dusk, the emperor decided to have a royal meal.
Baoding official chefs use domestic chicks to slaughter, add fresh
shrimps from Baiyangdian, serve with Huaimao sweet noodle sauce,
stir-fry a dish and serve it. After Kangxi eats this dish, I feel that it
has both the freshness of chicken and the crispness of shrimps. I felt
the taste of the sauce lingering on my lips and teeth, so I called the
chef and asked what kind of dish it was. The chef was in a hurry,
thinking of the jumping shape of the fresh shrimp when cooking, and
he replied casually: Back to the emperor, this dish is originally called
chicken bouncing. When Kangxi heard it, Longyan was very happy.
He praised: "What a chicken! Chicken and shrimp are the best of both
water and land. This dish has a scene and a vivid name."
This dish is based on Baiyangdian specialty prawns and domestic
chicks. Baoding chefs boldly created new dishes in the early Qing
Dynasty.

The two charts above summarise the best dietary information. Besides
vegetables, fruits, healthy oils and proteins, having a healthy lifestyle
is also very significant and is addressed on the healthy eating
pyramid. Examples of a healthy lifestyle includes exercise, weight
control, vitamin D, multivitamin supplements. The healthy eating plate
allows us to know the amount or ratio of different food we need in
every meal. Vegetables and Fruits are around 50% of the plate
whereas whole grains and protein are are around 25% of your plate
respectively. Healthy plant oils such as olive, soy, corn, peanut and
others also can’t be excluded from our diet. We need to avoid
hydrogenated oils which contains unhealthy trans fat.
Diet Studies Into Our Dish
Our dish’s main ingredients include chicken,
shrimps and bell pepper. Chicken is filled
with high-quality proteins and doesn’t
contain much fat. Moreover, it contains
Vitamin B12 which places an irreplaceable
role in red blood cell formation, cell
metabolism and production of DNA. Shrimp
contains zinc which is essential for many
body’s functions and system like the immune
system, wound healing , blood clotting etc.
Bell peppers are 92% composed of water and
small amounts of protein and fat. Bell
peppers contains fiber which helps control
blood surge levels and lower cholesterol
levels.
Ruby Reflection:
Firstly, I have learnt about the essence of
Chinese cooking, from preparing ingredients to
presentation of the dish, we did that all by
ourselves. The satisfaction afterwards will after
all be a precious memory in our hearts. Also, I
have found out that communication is very
important when it comes to cooperating with
my teammates because we can exchange
information with one another and be motivated
to active learning. To conclude, I am sure we 2P Ruby Ng (25)
will all cherish the memories that we share in
this project.
Ines Reflection:
Through this project, not only I know more
about China’s dishes, I also get to work with
classmate I have never worked with. Not only
learning more about healthy diets and food
pyramid, I also learned how to cooperate
with my group mates. It’s my first time
cooking in groups of four and I gained more
experience on cooking. I would love to thank 2P Ines Owyang (26)
all my group mates for their help and
guidance on this project
Mavis Reflection:
Through this project, I felt really over the moon since I learnt
different cooking skills which definitely broaden my horizon
and I am sure they will be exceptionally useful for my future.
In addition, I am truly proud of our group as we cooperated
well as a team while doing the project and cooking the dish.
From this valuable experience, the reality hit me fast and
hard about the true meaning of “united we stand, divided we
fall.” In our project, since we cooperated with each other, we
are able to successfully complete our project and dish on

time. Therefore, I came to the realisation that cooperation
enables people to set aside their differences and arrive at a
mutual solution for achieving a common goal.
Madelyn Reflection:
Through this project, I got to know more about
my classmates and we can cook together as a
group. Cooperation is very important and in my
opinion we have been cooperating very well! I
want to thank my group mates for being so
helpful and efficient. I’ve never cooked such a dish
without guidance but knowing that it turned out
great make me feel successful. Last but not least, I
would like to thank my group mates again for 2P Madelyn Shui (28)
cooperating together so well and everyone was
trying to improve the dish for the better.

CONCLUSION
Cooking can be more than just making food for day-to-day
meals. It can transform routine to a passion, like how
we have learnt to love the process of cooking, but not
only the result. Cooking may be the oldest and most
widespread application of chemistry and recipes may
be the oldest practical result of chemical research.
There are many more items out there and even more
chemical knowledge to gain. We are grateful that we
have such a bond between us which makes our project
goes this well.
