                 Definition
Separation process in which a certain quantity

is divided in a number of small quantities
(fractions) in which composition is modified.

          SOLVENT FRACTIONATION
Fat dissolved in a solvent ( acetone, hexane, isopropyl
alcohol)
Dilute conditions:
 No liquid oil occlusion at the surface of the crystals.
 Good selectivity, low tendency to form co-crystals.
High cost ( Solvent, explosion proof)
High energy consumption (Cooling at low temperatures,
evaporation of solvent) and environmental issues.
Continuous process ( Technology still applied for
specialty fats).
