HOW TO USE
This sequel to my original Frugal Meal Planner will help you save
money and stick to your budget by eating at home every night!
The recipes are written to be eaten for one night, but I encourage
doubling the recipe to eat leftovers the next night too!
I leave them as "one night" recipes so they can be adjusted for any
family size and doubled from there for leftovers.
These recipes are EVEN more frugal, more kid friendly, and easier
than my original planner so I'm hoping you will see your grocery
budget drop even more! Enjoy!
FLEXIBILITY
In our family, we repeat the meal plan for 3 months, then move on to the 2nd quarter meal plan.
If you want more variety in your meals, simply eat through the first quarter meals, then go straight to the 2nd quarter meals, and
so on. At the end of the 4th month, start over!
If eating leftovers isn't for you, don't worry! Make the recipes for one night only, and do your own thing on the alternate nights.
The leftover method is simply the way that our family has found encourages us to eat at home every night, without having to
cook daily!

When we started our debt free journey, the first thing we
needed to do was cut our expenses.
Even though I wasn't exactly thrilled about becoming Betty People started asking, what we were eating to save so much
Crocker in the kitchen, I absolutely knew that home cooked money every month...
meals were the key to slashing our grocery budget.
That's when my original Frugal Meal Planner was born!
In fact, once we started eating at home we went from
spending $1500 a month on food, to spending only I love that I've been able to help so many people cut their food
$500/month (or about $100/week for our family of 5). budget in half, and take the struggle out of planning meals
every week.
It was working! We were saving money!
As grocery prices continue to rise, I wanted to put something

MORE HELPFUL TIPS...
The meal plan is laid out to where you will cook Sunday, Tuesday, and Thursday, and eat leftovers Monday,
Wednesday, and Friday.
Each recipe is made to serve a family of 4. You will need to double the recipe to have leftovers the next night.
The recipes are listed to serve 4-6 people so that you can have them for only one night if you prefer. If there are
two people in your family, you should have enough for 2 nights.
I have it laid out this way so you can double, triple, or half as needed for your family size!
You can start the plan on a Monday instead, or shuffle the plan around any way that works best for your family. A
blank meal planning calendar is included so you can print and reuse as often as you wish.
I find that leaving the "leftover" days for your busiest nights works best.
I've included Saturday as a "FLEX" day. This acts as a buffer for those days when you simply can't get dinner on the
table, get invited to a friend or family member's house, or if you prefer to include one night a week to go out to a
restaurant or grab fast food. You can shift the flex day to whichever night works best.
As long as you budget and plan ahead, you will save BIG by following this plan.
If you are making food for multiple nights, make sure to refrigerate or freeze based on the above recommendations.

Steps: INGREDIENTS:
2 large chicken breasts
1. Slice the chicken breasts into 6-8 slices each.
In a large bowl whisk together the cream of chicken 1 can of cream of chicken soup
soup, 1 cup of chicken broth, minced onion, salt & 4 cups chicken broth

Leftover Lemon Chicken
1. Use Leftover chicken (or repeat steps below) 3 cups chicken broth
1 bag frozen mixed vegetables
¼ cup instant rice
2. Slice the chicken breasts into 6-8 slices each. Salt & pepper to taste
In a large bowl whisk together the cream of chicken
soup, 1 cup of chicken broth, minced onion, salt &
pepper, lemon zest and juice until well combined.
Stir in the sliced chicken breast.
Steps: INGREDIENTS:
2 boxes of macaroni and cheese
1. Preheat oven to 350 degrees and prepare a 9x13 pan
with nonstick spray. 1 can cream of mushroom soup
Cook the macaroni until tender, drain, and place back 12 oz can of tuna
in the pot. ½ cup milk
2 cups cheddar cheese shreds
2 cups potato chips, crushed
2. Mix in the macaroni & cheese packets, mushroom soup,
milk, tuna, 1 cup of cheese, 1 cup of crushed potato

1. Cut half of the sausage lengthwise into 4 equal size
pieces. 1 can refried beans

1. Cook the rice or warm leftover rice, set aside. 1 small red onion
1 green bell pepper

2 cups instant rice, cooked
2. Cut the remaining sausage half into chunks and cook
in a skillet over medium heat until browning.
Steps: INGREDIENTS:
1 package of cornbread mix
1. Preheat oven per cornbread mix instructions and spray
muffin tins with nonstick spray. 1 egg
1/3 cup milk
½ package of hot dogs (5)
½ cup cheddar cheese shreds
2. Slice the hot dogs into rounds, set aside. 2 tablespoons dry minced onion
Prepare the cornbread mix, adding egg and milk per 2 tablespoons chili powder
package directions.
Steps: INGREDIENTS:
1/2 rotisserie chicken, shredded
1. Preheat oven to 350 degrees.
In a bowl mix together ½ of the rotisserie chicken, 2 refrigerated pie crusts
soup, mixed vegetables, dry minced onion, and salt & 1 can cream of chicken soup
pepper to taste. 1 bag frozen mixed vegetables

2. Unroll one pie crust and place it in a pie pan - or use
frozen crust already in pan. Fill crust with chicken
mixture.

Leftover rotisserie chicken
1. Use leftover shredded rotisserie chicken. ¼ cup chopped walnuts
¼ cup dry cranberries
½ cup mayonnaise
Salt & pepper to taste
2. In a bowl mix together the remaining chicken, Crackers or sandwich bread
mayonnaise, cranberries, walnuts, dry onion and salt &
pepper to taste until well combined. dry minced onion to taste

1 loaf french bread
1. Preheat oven to 350 degrees and line a baking sheet
with parchment paper. 1 jar pizza sauce
2 cups mozzarella cheese shreds
½ package pepperoni slices

1 - 2 lb bag of frozen meatballs
1. Place meatballs into the slow cooker. 1 can enchilada sauce
1 package spanish rice

1. Prepare the salad mix with all the included ingredients. 6 sandwich rolls
1 bag of chipotle salad mix
3. Fill the center section of the roll with the salad mix.
Special Notes
4. Top with meatballs and sauce. Use 2nd half of meatballs from
previous recipe.

1. Preheat oven to 400 degrees and prepare a 9x13 pan
with nonstick spray. 1 can Manwich sauce

Steps: INGREDIENTS:
2 large chicken breasts, sliced into pieces
1. Preheat oven to 400 degrees and spray a baking dish
with nonstick spray. 1 container plain greek yogurt
Slice the chicken breasts into 6-8 slices each. ¼ cup olive oil
¼ cup balsamic vinegar
1 teaspoon minced garlic
2. In a bowl whisk together yogurt, olive oil, balsamic 1 teaspoon dry oregano
vinegar, garlic, oregano, and salt & pepper until well Salt & pepper to taste
combined - set aside a few tablespoon of this mixture 1 bag mixed salad greens
to dress the salad. ½ cup kalamata olives
½ cup feta cheese crumbles
3. Stir in the sliced chicken breast into the mixture and
marinate for at least 30 minutes.

quick and easy meal. 4 pita breads
1 cup hummus
½ cup kalamata olives
½ cup feta cheese crumbles
2. Spread the hummus on top of each pita.

1. Bring a pot of salted water to a boil. ½ package (5) hot dogs

1. Cook the potatoes in the microwave until tender 2 large russet potatoes
(approx 6 to 8 minutes per potato).

1 lb egg noodles
1. Bring a pot of salted water to a boil. ½ stick butter

1 teaspoon italian seasoning

1. Cook the instant rice per directions, set aside. 2 cups dry instant rice
In a skillet cook the ground meat with the dry minced

1. Cook the pasta until tender, drain, place back in pot

2. In a skillet cook the ground meat with the dry minced 1 teaspoon italian seasoning

oven safe bowls with nonstick spray. ½ bag frozen mixed vegetables
1 envelope of instant mashed potatoes
2 tablespoons butter
2 tablespoons flour
2. Prepare the instant potatoes using ½ cup more water 1 tablespoon dry minced onion
than called for - set aside. In a skillet brown the Salt & pepper to taste
ground meat. Stir in the butter until melted.
5. Bake for 20-30 minutes until the tops are just turning
golden brown. Serve and enjoy!

1 box 10 frozen fish filets (use half for tacos)
1. Bake the fish filets per package directions. 2 tomatoes
Place on paper towel lined plate.
1 yellow onion
1 bunch cilantro

2. Use a food processor to combine the tomatoes, onion,
and cilantro into a fresh salsa.

1. Mix the coleslaw salad with the dressing that comes 4 sandwich rolls
with the coleslaw mix, and set aside.

2. Cut open the middle of roll and press the inside bread
down to form a pocket.

1. Cook the rice per package directions - set aside. 1 cup fresh broccoli, chopped

1 1/2 cups Italian dressing-divided
1. Place ½ cup Italian dressing into the bottom of the 2 large chicken breasts
slow cooker.
Place the chicken breasts on top of the dressing. 4 sandwich rolls
Pour another ½ cup of dressing over the chicken. ¼ cup mozzarella cheese shreds
Salt & pepper to taste
Steps: INGREDIENTS:
Leftover Italian Chicken
1. Cook the pasta until tender, drain, set aside. 1 lb egg noodles
1 cup fresh spinach, sliced into ribbons
1 small container ricotta cheese
Salt & pepper to taste
2. Stir the ricotta into the shredded chicken left in the
slow cooker.
Steps: INGREDIENTS:
1 lb ground meat
1. Preheat oven to 400 degrees and prepare an 8x8
baking dish with nonstick spray. ¼ cup breadcrumbs
¼ cup shredded carrots
¼ cup diced bell pepper
1 egg
2. Incarrots,
a bowl mix the ground meat, egg, breadcrumbs,
bell pepper, onion, and salt & pepper until well
½ cup pasta sauce with veggies
1 tablespoon dry minced onion
combined. Salt & pepper to taste
Steps: INGREDIENTS:
1 package of smoked sausage
1. Cut one piece of the sausage into small half circles. 1 jar alfredo sauce
½ yellow onion, diced
1 green bell pepper, diced
2. In a skillet over medium high heat cook the sausage, 2 celery stalks, diced
onions, celery and bell pepper until the sausage is hot 1 tablespoon cajun seasoning
and the veggies are soft.
½ lb thin spaghetti, cooked and drained
Salt & pepper to taste
Steps: INGREDIENTS:
Leftover smoked sausage
1. Preheat oven to 400 degrees and line a baking sheet 1 lb baby red potatoes
with foil sprayed with nonstick spray.
1 lb fresh green beans
1 tablespoon olive oil
2. Cut the remaining piece of sausage in half lengthwise Salt & pepper to taste
then into small strips.
Cut the red potatoes in half and place in a large bowl.
Cut the tips of the green beans off then cut them in
half - set aside.
Steps: INGREDIENTS:
1/2 pound ground meat (beef or Turkey)
1. Preheat oven to 375 and prepare an 8x8 baking dish 2 cups frozen potato wedges
with nonstick spray.
1 cup lettuce shreds
1 tomato, chopped
½ cup cheddar jack cheese shreds
¼ cup sliced dill pickles
2. In a skillet cook meat with the dry minced onion, garlic ¼ cup thousand island dressing
powder, and salt & pepper.
1 tablespoon dry minced onion
1 teaspoon garlic powder
3. Add in the potato wedges, cover and steam for 5 Salt & pepper to taste
minutes or so.
Special Notes
4. Spread evenly in the dish, top with ¼ cup of cheese,
and bake for 25 minutes.
Steps: INGREDIENTS:
8 thin cut chicken breasts
1. Preheat oven to 400 degrees and line a baking sheet ¼ cup olive oil
with foil sprayed with nonstick spray.
¼ cup breadcrumbs
1 teaspoon italian seasoning
1 teaspoon garlic powder
2. In a shallow dish whisk together the breadcrumbs, 1 jar pasta sauce
italian seasoning, garlic powder, salt & pepper until well

combined.
Salt & pepper to taste
½ lb egg noodles, cooked & drained
3. Brush the chicken breasts with olive oil and then into
the breadcrumb mix to coat both sides.
Place on the lined baking sheet and bake for 15
minutes until done. Special Notes
4. Cook the pasta and drain - mix with a little butter, salt Set aside half of the chicken

1. Spoon sauce and mozzarella cheese over cooked 1 jar pasta sauce
chicken breasts place them on baking sheet.

1/2 pound ground meat (we use Turkey)
1. In a large pot cook meat with chili powder, cumin, 1 cup instant white rice
paprika, dry onion, and salt & pepper.
1 can corn, drained
1 can fire roasted tomatoes
2 teaspoons chili powder
2. Stir in beans, tomatoes, corn, rice, and 1 cup of water. 1 teaspoon cumin
1 teaspoon paprika
1 teaspoon dry onion
1 can pinto beans
3. Cook until rice is tender. Chopped cilantro, for garnish
1/4 cup cheddar cheese

4. Top with remaining ¼ cup of cheese and chopped
cilantro.

1 lb ground meat (we used turkey)
1. In a large pot cook the ground meat with the dry onion 2 cans chili beans
and seasonings until done.

2. Stir in tomatoes and beans and simmer on low for 15- 1 teaspoon cumin
20 minutes.

3. Place chips in a serving bowl then sprinkle on green Green onion, chopped
onions and cheese. Shredded cheddar jack cheese

4. Scoop chili over the top of the chips. Set aside half of the chili for
next recipe.

1. Cook the macaroni until tender and drain. Shredded cheddar jack cheese
1 box macaroni and cheese w/ cheese sauce

2 large chicken breasts, cut into slices
1. Inorange
a large bowl mix the chicken slices, bbq sauce and
marmalade together tossing until the chicken is ¾ cup bbq sauce
completely coated. ¾ cup orange marmalade
6 green onions, sliced
Sesame seeds for garnish
2. Place in the slow cooker, cover, and cook on low 6-8
hours or high 5 hours
2 cups instant white rice
Cornstarch as needed to thicken sauce
If the sauce needs a little thickening, stir in a teaspoon
of cornstarch.
